  2. 2. Cut the mushrooms into six or eight pieces depending on their size.
  3. 3. Halve the onions and peel off the skin.
  4. 4. Dice the onions into small cubes.
  5. 5. Peel the parsnips.
  6. 6. Dice the parsnips into small cubes as well.
  7. 7. Bring 5 liters of salted water to a boil in a large pot.
  8. 8. Cover the pot with the water.
  9. 9. Heat 2 tablespoons of oil in a frying pan over high heat.
  10. 10. Add the ground meat to the hot pan.
  11. 11. Season the meat with 2 pinches of salt.
  12. 12. Sear the meat for about 2 to 3 minutes.

  25. 25. Take 300 milliliters of cooking water from the pot with the pasta water.
  26. 26. Add the cooking water to the sauce in the pan.
  27. 27. Bring the sauce to a boil.
  28. 28. Let the sauce reduce for about 5 to 7 minutes until it becomes creamy.
  29. 29. Cook the macaroni in the boiling salted water for about 7 minutes al dente.
  30. 30. Grate the Parmesan finely.
  31. 31. Drain the macaroni in a colander.
  32. 32. Mix the macaroni with the sauce in the pot.
  33. 33. Season the macaroni to taste with salt and pepper.
  34. 34. Serve the macaroni on deep plates.
  35. 35. Sprinkle the macaroni with the grated Parmesan.
