🍽️ Makkaroni with Ground Meat and Mushroom Ragu

Ingredients
- mushrooms, white 500 g
- onions, yellow 2 pcs
- parsnips 2 pcs
- salt pinch
- oil 4 tbsp
- minced meat, mixed 600 g
- marjoram, dried pinch
- white wine, dry 200 ml
- macaroni 500 g
- parmesan 40 g
- pepper, black ground pinch
Instructions
- 1. Dry the mushrooms with a kitchen towel if necessary.
- 2. Cut the mushrooms into six or eight pieces depending on their size.
- 3. Halve the onions and peel off the skin.
- 4. Dice the onions into small cubes.
- 5. Peel the parsnips.
- 6. Dice the parsnips into small cubes as well.
- 7. Bring 5 liters of salted water to a boil in a large pot.
- 8. Cover the pot with the water.
- 9. Heat 2 tablespoons of oil in a frying pan over high heat.
- 10. Add the ground meat to the hot pan.
- 11. Season the meat with 2 pinches of salt.
- 12. Sear the meat for about 2 to 3 minutes.
- 13. Remove the seared meat from the pan.
- 14. Place the meat on a plate and set it aside.
- 15. Leave the pan with the meat residues unwashed.
- 16. Add the prepared vegetables to the pan.
- 17. Add 2 tablespoons of oil to the vegetables.
- 18. Sauté the vegetables over medium to high heat.
- 19. Stir the vegetables occasionally.
- 20. Cook the vegetables for about 5 minutes until they are golden brown.
- 21. Add marjoram to the vegetables in the pan.
- 22. Return the seared meat to the pan.
- 23. Deglaze the pan with white wine.
- 24. Boil the liquid down completely over high heat.
- 25. Take 300 milliliters of cooking water from the pot with the pasta water.
- 26. Add the cooking water to the sauce in the pan.
- 27. Bring the sauce to a boil.
- 28. Let the sauce reduce for about 5 to 7 minutes until it becomes creamy.
- 29. Cook the macaroni in the boiling salted water for about 7 minutes al dente.
- 30. Grate the Parmesan finely.
- 31. Drain the macaroni in a colander.
- 32. Mix the macaroni with the sauce in the pot.
- 33. Season the macaroni to taste with salt and pepper.
- 34. Serve the macaroni on deep plates.
- 35. Sprinkle the macaroni with the grated Parmesan.
