  1. 1. Rinse the sushi rice thoroughly in a sieve under running water until the water runs clear. Then bring the rice with 650 ml water in a pot to a boil and let it swell covered for about 10 minutes over low heat.
  2. 2. In the meantime, mix salt, sugar and vinegar in another pot and heat over low heat until everything is dissolved. Then let it cool down.
  3. 3. Wash the cucumber, quarter it lengthwise, remove the seeds and cut into thin strips. Halve the avocado, remove the pit and also cut into thin strips.
  4. 4. Line a wooden board or a sushi mat with cling film. Carefully mix the cooled vinegar into the rice with a wooden spoon. Place a nori sheet on the mat, spread the sushi rice with moist hands about 0.5 cm thick on it and leave about 1 cm free at the top edge.
  5. 5. Place the cucumber and avocado strips in the middle of the sushi rice and roll up into a firm roll with light pressure. Proceed similarly with the remaining ingredients.
  6. 6. Serve the vegetarian maki with soy sauce, sushi ginger and wasabi. Enjoy your meal!
