  1. 1. Wash the sushi rice thoroughly in a sieve until the water runs clear. In a pot, bring the rice and 650 ml water to a boil, then cover and let it steam on low heat for about 10 minutes.
  2. 2. In the meantime, mix salt, sugar, and vinegar in another pot and warm over low heat until the ingredients have completely dissolved. Let it cool down afterwards.
  3. 3. Place the surimi sticks in a sieve to drain. Wash the cucumber, cut it lengthwise into quarters, remove the seeds, and slice into thin strips. Halve the avocado, remove the pit, and also slice into thin strips. Slice the surimi sticks into thin strips.
  4. 4. Line a wooden board with plastic wrap. Gently fold the vinegar into the rice using a wooden spoon. Place a nori sheet on the board, spread the sushi rice with damp hands about 0.5 cm thick on it, leaving about 1 cm free at the top edge.
  5. 5. Turn the nori sheet with the rice side down and place it on a bamboo mat. Fill the center of the nori sheet with cucumber, avocado, and surimi sticks, and roll it into a tight roll with light pressure. Repeat with the remaining ingredients.
  6. 6. Place toasted sesame on a plate, roll the sushi rolls in it, and cut each into 8 pieces. Serve the sushi rolls with ginger and wasabi. Enjoy your meal!
