🍲 Corn Soup with Meatballs

Ingredients
- Corn from the can 570 g
- Onions, yellow 1 pc.
- Garlic cloves 1 pc.
- Pepper, red 1 pc.
- Oil 3 tbsp
- Salt pinch
- Pepper, black ground pinch
- Pepper, sweet pinch
- Vegetable broth 1 L
- Beef mince 600 g
- Creme fraiche 150 g
Instructions
- 1. Drain the corn in a sieve and let it dry. Halve the onion, peel it, and dice it finely. Peel and finely chop the garlic. Wash the bell pepper, halve it, remove the stem and seeds, and dice it small.
- 2. Heat 1 tablespoon of oil in a pot over high heat and sauté the onions for about 1 minute. Add the corn and season with salt, pepper, and paprika. Deglaze with vegetable broth and let it simmer for about 10 minutes.
- 3. In a bowl, combine the ground meat with the garlic and season with salt, pepper, and paprika. Shape the mixture into balls about 2 cm in size.
- 4. Heat 1 tablespoon of oil in a pan over high heat and sauté the bell pepper for about 4 minutes. Remove the pepper from the pan, heat another tablespoon of oil, and fry the meatballs for about 5 minutes until golden brown. Reduce the heat and let the meatballs cook covered for about 5 minutes.
- 5. Add the crème fraîche to the soup, blend everything finely, and season to taste. Serve in bowls and garnish with the bell pepper and meatballs. Optionally, decorate with parsley.
