  2. 2. Whisk eggs, sugar, and honey vigorously in a separate bowl using a hand mixer and whisk.
  3. 3. Add flour, ground almonds, a pinch of salt, and baking powder to the egg mixture.
  4. 4. Stir the dry ingredients in gently until just combined.
  5. 5. Add the melted butter to the batter and stir it in.
  6. 6. Chill the batter in the refrigerator for about 15 minutes to let it cool down.
  7. 7. Preheat the oven to 180 degrees Celsius (conventional/fan).
  8. 8. Stir the batter briefly just before baking.
  9. 9. Fill the batter into a suitable madeleine mold.
  10. 10. Bake the madeleines for approx. 13 minutes until golden brown.
