🍰 Crispy Madeleines with Almond Flavor

Ingredients
- butter 125 g
- eggs 3 pcs
- sugar 125 g
- honey 2 tbsp
- wheat flour, Type 405 125 g
- almonds, ground 60 g
- salt pinch
- baking powder 1 tsp
Instructions
- 1. Melt the butter in a small saucepan over low heat.
- 2. Whisk eggs, sugar, and honey vigorously in a separate bowl using a hand mixer and whisk.
- 3. Add flour, ground almonds, a pinch of salt, and baking powder to the egg mixture.
- 4. Stir the dry ingredients in gently until just combined.
- 5. Add the melted butter to the batter and stir it in.
- 6. Chill the batter in the refrigerator for about 15 minutes to let it cool down.
- 7. Preheat the oven to 180 degrees Celsius (conventional/fan).
- 8. Stir the batter briefly just before baking.
- 9. Fill the batter into a suitable madeleine mold.
- 10. Bake the madeleines for approx. 13 minutes until golden brown.
