  2. 2. Wash the broccoli and break it into small florets.
  3. 3. Add the pasta to the boiling water.
  4. 4. Cook the pasta for about 9 to 12 minutes.
  5. 5. Add the broccoli to the pasta during the last 4 minutes of cooking time.
  6. 6. Drain the pasta and broccoli in a colander.
  7. 7. Reserve 500 milliliters of the cooking water.
  8. 8. Let the pasta and broccoli drain well.
  9. 9. Melt the butter in a pot over low heat for about 3 minutes.
  10. 10. Add the flour and toast it briefly while stirring constantly.
  11. 11. Deglaze the mixture with the reserved cooking water and the milk.
  12. 12. Stir the sauce vigorously until it is smooth.
  13. 13. Bring the sauce to a boil.
  14. 14. Let the sauce simmer for about 10 minutes.
  15. 15. Season the sauce with pepper, nutmeg, and a pinch of salt.
  16. 16. Stir regularly to prevent burning.
  17. 17. Melt the Gouda cheese in the finished béchamel sauce.
  18. 18. Taste the sauce again and adjust seasoning if necessary.
  19. 19. Add the drained pasta and broccoli to the cheese sauce.
  20. 20. Heat the mixture briefly until it is hot.
  21. 21. Serve the dish immediately.
