  1. 1. Wash the mint thoroughly.
  2. 2. Shake the mint dry.
  3. 3. Pluck the mint leaves off the stems.
  4. 4. Wash the lemon under hot water.
  5. 5. Grate about one teaspoon of fine lemon zest.
  6. 6. Cut the lemon in half.
  7. 7. Squeeze the juice out of the lemon.
  8. 8. Take a bowl.
  9. 9. Add quark to the bowl.
  10. 10. Add cream cheese to the bowl.
  11. 11. Add powdered sugar to the bowl.
  12. 12. Add the grated lemon zest to the bowl.
  13. 13. Add two tablespoons of lemon juice to the bowl.
  14. 14. Mix all ingredients in the bowl well together.
  15. 15. Season the cream with salt or more sugar to taste.
  16. 16. Sort through the raspberries and remove any bad berries if necessary.
  17. 17. Take a tall container.
  18. 18. Add the raspberries to the container.
  19. 19. Add raspberry jam to the container.
  20. 20. Add one tablespoon of lemon juice to the container.
  21. 21. Puree the mixture in the container until smooth.
  22. 22. Take serving glasses.
  23. 23. Distribute the white quark cream evenly into the glasses.
  24. 24. Pour the raspberry sauce over the cream.
  25. 25. Garnish the dessert with the fresh mint leaves.
  26. 26. Place macarons as a side dish in the glass or on the plate.
  27. 27. Serve the dessert immediately.
