🍽️ Crunchy Mac & Cheese with Spinach and Macadamia

Ingredients
- onions, yellow 1 pc.
- spinach leaves 300 g
- garlic cloves 1 pc.
- macadamia nuts, roasted and salted 4 tbsp
- butter 4 tbsp
- salt 1 tbsp
- pepper, black ground pinch
- macaroni 500 g
- wheat flour, Type 405 1 tbsp
- milk 300 ml
- Gouda, young block 200 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius top/bottom heat.
- 2. Halve the onion and peel it.
- 3. Dice the onion finely.
- 4. Wash the spinach thoroughly.
- 5. Spin the spinach dry.
- 6. Peel the garlic.
- 7. Mince the garlic finely.
- 8. Chop the macadamia nuts.
- 9. Heat 2 tablespoons of butter in a pot over medium heat.
- 10. Sweat the onion cubes in the butter for about 2 minutes.
- 11. Add the spinach to the pot.
- 12. Season the spinach with salt and pepper.
- 13. Let the spinach wilt for about 3 minutes.
- 14. Pour the spinach into a colander.
- 15. Squeeze out the excess liquid from the spinach.
- 16. Place the spinach on kitchen paper.
- 17. Clean the pot.
- 18. Bring about 5 liters of salted water to a boil in a pot.
- 19. Cook the macaroni for about 8 minutes until al dente.
- 20. Pour the pasta into a colander.
- 21. Let the pasta drain.
- 22. Heat 2 tablespoons of butter in the pot over medium heat.
- 23. Fry the garlic for about 1 minute.
- 24. Dust the garlic with flour.
- 25. Toast the flour for about 1 minute.
- 26. Pour in the milk while stirring constantly with a whisk.
- 27. Bring the sauce to a boil.
- 28. Season the sauce with salt and pepper.
- 29. Let the sauce simmer for about 4 minutes.
- 30. Add 150 grams of Gouda to the sauce.
- 31. Let the Gouda melt in the sauce.
- 32. Add the hot pasta to the cheese sauce.
- 33. Add the spinach to the cheese sauce.
- 34. Mix everything well.
- 35. Taste the mixture and adjust seasoning.
- 36. Transfer the mixture into a baking dish.
- 37. Sprinkle the chopped macadamia nuts over the top.
- 38. Sprinkle the remaining Gouda over the top.
- 39. Bake the dish for about 20 minutes in the oven.
- 40. Bake until it is golden brown and crispy.
- 41. Serve the mac and cheese with spinach on plates.
