  1. 1. Preheat the oven to 220 degrees Celsius (conventional fan setting).
  2. 2. Fill a large pot with about 5 liters of water and add some salt.
  3. 3. Bring the water to a boil.
  4. 4. Add the macaroni pasta to the boiling water.
  5. 5. Cook the pasta for about 9 minutes until they are al dente (firm to the bite).
  6. 6. Drain the pasta in a colander.
  7. 7. Place the drained pasta into a baking dish.
  8. 8. Melt 3 tablespoons of butter in a pot over medium heat.
  9. 9. Stir flour into the melted butter.
  10. 10. Pour in vegetable broth and milk while stirring constantly into the butter-flour mixture.
  11. 11. Bring the sauce to a boil.
  12. 12. Remove the pot with the sauce from the heat.
  13. 13. Stir the Emmental cheese into the hot sauce until it is completely melted.
  14. 14. Season the cheese sauce with salt and paprika powder.
  15. 15. Pour the finished cheese sauce over the macaroni in the baking dish.
  16. 16. Mix the pasta and the sauce thoroughly together.
  17. 17. Sprinkle Parmesan cheese over the pasta.
  18. 18. Bake the mac and cheese in the preheated oven for about 10 to 12 minutes.
  19. 19. Wash the arugula in a colander under running water.
  20. 20. Spin the arugula dry.
  21. 21. Halve a lime.
  22. 22. Squeeze the juice out of the lime.
  23. 23. Put oil, water, 2 tablespoons of lime juice, honey, and mustard into a bowl.
  24. 24. Whisk the ingredients with a whisk until you have a smooth vinaigrette (dressing).
  25. 25. Season the vinaigrette with salt and pepper.
  26. 26. Gently fold the dry arugula into the vinaigrette.
  27. 27. Take the hot macaroni bake out of the oven.
  28. 28. Divide the mac and cheese onto the plates.
  29. 29. Serve the mac and cheese together with the fresh salad.
