🥗 Creamy Mac & Cheese with Fresh Lime Arugula Salad

Ingredients
- Salt pinch
- Macaroni 500 g
- Butter 3 tbsp
- Wheat flour, Type 405 2 tbsp
- Vegetable broth 250 ml
- Milk 250 ml
- Emmental grated 200 g
- Red bell pepper pinch
- Parmesan, grated 4 tbsp
- Arugula 150 g
- Organic limes 1 pc.
- Oil 2 tbsp
- Water 3 tbsp
- Honey 1 tbsp
- Mustard 1 tbsp
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 220 degrees Celsius (conventional fan setting).
- 2. Fill a large pot with about 5 liters of water and add some salt.
- 3. Bring the water to a boil.
- 4. Add the macaroni pasta to the boiling water.
- 5. Cook the pasta for about 9 minutes until they are al dente (firm to the bite).
- 6. Drain the pasta in a colander.
- 7. Place the drained pasta into a baking dish.
- 8. Melt 3 tablespoons of butter in a pot over medium heat.
- 9. Stir flour into the melted butter.
- 10. Pour in vegetable broth and milk while stirring constantly into the butter-flour mixture.
- 11. Bring the sauce to a boil.
- 12. Remove the pot with the sauce from the heat.
- 13. Stir the Emmental cheese into the hot sauce until it is completely melted.
- 14. Season the cheese sauce with salt and paprika powder.
- 15. Pour the finished cheese sauce over the macaroni in the baking dish.
- 16. Mix the pasta and the sauce thoroughly together.
- 17. Sprinkle Parmesan cheese over the pasta.
- 18. Bake the mac and cheese in the preheated oven for about 10 to 12 minutes.
- 19. Wash the arugula in a colander under running water.
- 20. Spin the arugula dry.
- 21. Halve a lime.
- 22. Squeeze the juice out of the lime.
- 23. Put oil, water, 2 tablespoons of lime juice, honey, and mustard into a bowl.
- 24. Whisk the ingredients with a whisk until you have a smooth vinaigrette (dressing).
- 25. Season the vinaigrette with salt and pepper.
- 26. Gently fold the dry arugula into the vinaigrette.
- 27. Take the hot macaroni bake out of the oven.
- 28. Divide the mac and cheese onto the plates.
- 29. Serve the mac and cheese together with the fresh salad.
