🍰 Maamoul – Arabic Date Cookies

Ingredients
- Dates on the branch 200 g
- Semolina 650 g
- Salt Pinch
- Sugar 100 g
- Milk 170 ml
- Butter 250 g
- Powdered sugar 1 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan setting.
- 2. Remove the dates from the stems.
- 3. Cut each date open on one side.
- 4. Carefully remove the hard pit from the date.
- 5. Pour the semolina into a large bowl.
- 6. Add salt and sugar to the semolina.
- 7. Warm the milk in a pot over medium heat.
- 8. Let the butter melt in the warm milk.
- 9. Pour the lukewarm milk and butter mixture onto the semolina.
- 10. Knead the ingredients together to form a firm dough.
- 11. Roll the dough into small balls.
- 12. Make sure the dough balls are about twice as big as the dates.
- 13. Press a small indentation into each dough ball with your finger.
- 14. Place a pitted date into the indentation.
- 15. Close the dough around the date.
- 16. Reshape the filled ball into a smooth sphere.
- 17. Flatten the ball to form a cookie.
- 18. Press patterns into the surface using the tines of a fork.
- 19. Place the cookies close together on a baking sheet lined with baking paper.
- 20. Bake the cookies in the oven for about 15 minutes.
- 21. Remove the cookies when they are golden yellow.
- 22. Ensure the cookies stay light in color, similar to vanilla crescent cookies.
- 23. Lightly dust the finished cookies with powdered sugar.
