🍰 Funny Lime Cookies

Ingredients
- Organic Limes 2 pcs
- Butter 130 g
- Sugar 75 g
- Salt pinch
- Vanilla Sugar 2 tsp
- Eggs 2 pcs
- Wheat flour, Type 405 250 g
- Vanilla pudding powder 37 g
- Baking powder 3 tsp
- Milk 80 ml
- Icing sugar 200 g
- Dark chocolate coating 100 g
- Milk chocolate sprinkles 50 g
Instructions
- 1. Rinse the limes under running water.
- 2. Finely grate about one teaspoon of the lime zest.
- 3. Squeeze out the lime juice.
- 4. Place the soft butter, sugar, salt, lime zest, and vanilla sugar in a bowl.
- 5. Beat the mixture until creamy using a hand mixer.
- 6. Work the eggs into the mixture one by one until well combined.
- 7. Mix the flour, pudding powder, and baking powder in a separate bowl.
- 8. Stir the flour mixture and the milk into the butter mixture alternately.
- 9. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 10. Line the baking trays with baking paper.
- 11. Take small portions of the dough using two tablespoons.
- 12. Place the dough portions on the trays with some space between them.
- 13. Bake the cookies one after another for about 15 minutes until golden brown.
- 14. Check for doneness with a wooden skewer that should come out clean.
- 15. Let the cookies cool completely on a wire rack.
- 16. Sift the powdered sugar into a bowl.
- 17. Stir the powdered sugar with the lime juice to form a thick glaze.
- 18. Spread the glaze on the bottom side of the cooled cookies.
- 19. Decorate the cookies with sugar sprinkles.
- 20. Let the glaze dry completely.
- 21. Bring about 500 milliliters of water to a boil in a pot.
- 22. Chop the chocolate coating roughly.
- 23. Melt the chocolate coating in a bowl over the hot water bath.
- 24. Fill the melted chocolate into a piping bag.
- 25. Decorate the cookies with the chocolate and sprinkles to create funny faces.
