🍰 Low-Carb Marble Cake

Ingredients
- oil 1 tbsp
- lemons 1 pc
- eggs 6 pc
- butter 50 g
- quark 40% fat in total 250 g
- vanilla sugar 2 tsp
- almonds, ground 250 g
- baking powder 1 tsp
- cocoa powder 2 tbsp
Instructions
- 1. Preheat the oven to 160 °C (top/bottom heat). Grease a loaf pan and dust it with a little flour. Wash the lemon and finely grate about 1 tsp of the zest. Separate the eggs. Beat the egg whites in a bowl with a hand mixer and whisk until stiff.
- 2. In another bowl, beat the butter with a hand mixer until fluffy. Gradually add the egg yolks. Stir in quark, lemon zest, vanilla sugar, ground almonds, and baking powder. Gently fold the egg whites into the mixture.
- 3. Divide the dough into two halves and mix one half with cocoa powder. Put the light dough into the pan and spread the chocolate dough on top. Gently swirl everything together with a wooden skewer to create the typical marble cake pattern.
- 4. Bake the cake for about 45 minutes in the oven and let it cool slightly. Serve it warm or cold. Enjoy!
