🍲 Lentil Soup with Sweet Potatoes

Ingredients
- sweet potatoes 500 g
- soup vegetables 1 bunch
- onions, yellow 1 pc.
- oil 2 tbsp
- lentils, red 200 g
- bay leaves, dried 1 pc.
- tomato paste 2 tbsp
- salt pinch
- pepper, black ground pinch
- cumin pinch
- vegetable broth 1.5 L
- snack salami 6 pcs.
Instructions
- 1. Wash and peel the sweet potato. Also wash the soup vegetables and peel if necessary. Dice the carrots, celery, and sweet potato into small cubes. Cut the leek into fine strips. Halve the onion, peel it, and dice it.
- 2. Heat oil in a pot over medium heat and sauté the chopped vegetables for about 3 minutes. Add the lentils, bay leaf, and tomato paste and roast for about 1 minute. Season with salt, pepper, and cumin, then add broth. Cover and simmer for about 15 minutes.
- 3. Slice the salami at an angle and add it to the soup. Taste and serve in bowls. Enjoy your meal!
