  1. 1. Bring lentils in a pot with bay leaf and broth to a boil and cook for about 25 minutes with the lid closed. Add some broth if necessary. The lentils should be soft but not falling apart. Let cool and remove the bay leaf.
  2. 2. Cut shallots in half, peel and chop finely. Remove skin from the fish fillets and flake into pieces. Wash cucumber thoroughly, cut in half lengthwise, remove seeds and cut into cubes. Wash apple, quarter, remove core and grate coarsely.
  3. 3. In a bowl, mix vinegar, oil, honey, salt and pepper to make a dressing and season to taste. Mix the lentils with the dressing and let it sit for a short while. Then fold in the remaining ingredients and season again. Serve the lentil salad with mackerel and apple. Enjoy your meal!
