🍽️ Chicken Lentil Curry with Crispy Sugar Snap Peas

Ingredients
- Salt 1 tbsp
- Chicken breast fillets 600 g
- Pepper, black ground pinch
- Lentils, red 220 g
- Organic limes 1 pc.
- Ginger, fresh 20 g
- Snow peas 300 g
- Oil 1 tbsp
- Curry powder 1 tbsp
- Cilantro, fresh 20 g
- Sugar pinch
Instructions
- 1. Bring 300 milliliters of salted water to a boil in a pot.
- 2. Rinse the chicken meat and pat it dry with a kitchen towel.
- 3. Season the meat generously with salt and pepper.
- 4. Place the meat into the boiling salted water.
- 5. Let the chicken cook covered on low heat for about 18 minutes.
- 6. Meanwhile, bring 800 milliliters of water to a boil in a separate pot.
- 7. Add the lentils to the boiling water.
- 8. Let the lentils cook covered on medium heat for about 7 minutes.
- 9. Rinse the lime thoroughly.
- 10. Cut the lime in half.
- 11. Squeeze the juice out of the lime.
- 12. Add the lime halves to the chicken broth.
- 13. Peel the ginger.
- 14. Finely chop the ginger.
- 15. Set aside one cup of the lentil cooking water.
- 16. Rinse the sugar snap peas.
- 17. Cut the sugar snap peas diagonally in half.
- 18. Drain the cooked lentils.
- 19. Heat 1 tablespoon of oil in a frying pan.
- 20. Add the lentils and the curry powder to the hot pan.
- 21. Fry the mixture on high heat for about 1 to 2 minutes.
- 22. Deglaze the lentils with the reserved cooking water.
- 23. Add 1 tablespoon of lime juice.
- 24. Add the cut sugar snap peas to the pan.
- 25. Add the chopped ginger to the pan.
- 26. Let everything cook on medium heat for about 4 minutes.
- 27. Stir the mixture occasionally.
- 28. Rinse the coriander leaves.
- 29. Dry the coriander leaves thoroughly.
- 30. Finely chop the coriander leaves.
- 31. Add the chopped coriander to the lentils.
- 32. Season the curry with salt and pepper.
- 33. Add a pinch of sugar.
- 34. Add a little more lime juice.
- 35. Remove the chicken from the broth.
- 36. Season the chicken to taste.
- 37. Plate the chicken.
- 38. Place the lentil curry next to the chicken.
- 39. Serve the dish.
