  2. 2. Rinse the chicken meat and pat it dry with a kitchen towel.
  3. 3. Season the meat generously with salt and pepper.
  4. 4. Place the meat into the boiling salted water.
  5. 5. Let the chicken cook covered on low heat for about 18 minutes.
  6. 6. Meanwhile, bring 800 milliliters of water to a boil in a separate pot.
  7. 7. Add the lentils to the boiling water.
  8. 8. Let the lentils cook covered on medium heat for about 7 minutes.
  9. 9. Rinse the lime thoroughly.
  10. 10. Cut the lime in half.
  11. 11. Squeeze the juice out of the lime.
  12. 12. Add the lime halves to the chicken broth.
  13. 13. Peel the ginger.
  14. 14. Finely chop the ginger.
  15. 15. Set aside one cup of the lentil cooking water.
  16. 16. Rinse the sugar snap peas.
  17. 17. Cut the sugar snap peas diagonally in half.
  18. 18. Drain the cooked lentils.
  19. 19. Heat 1 tablespoon of oil in a frying pan.
  20. 20. Add the lentils and the curry powder to the hot pan.
  21. 21. Fry the mixture on high heat for about 1 to 2 minutes.
  22. 22. Deglaze the lentils with the reserved cooking water.
  23. 23. Add 1 tablespoon of lime juice.
  24. 24. Add the cut sugar snap peas to the pan.
  25. 25. Add the chopped ginger to the pan.
  26. 26. Let everything cook on medium heat for about 4 minutes.
  27. 27. Stir the mixture occasionally.
  28. 28. Rinse the coriander leaves.
  29. 29. Dry the coriander leaves thoroughly.
  30. 30. Finely chop the coriander leaves.
  31. 31. Add the chopped coriander to the lentils.
  32. 32. Season the curry with salt and pepper.
  33. 33. Add a pinch of sugar.
  34. 34. Add a little more lime juice.
  35. 35. Remove the chicken from the broth.
  36. 36. Season the chicken to taste.
  37. 37. Plate the chicken.
  38. 38. Place the lentil curry next to the chicken.
  39. 39. Serve the dish.
