  1. 1. Cut the onion in half and peel it. Dice the onion into small cubes.
  2. 2. Peel the garlic and the ginger. Finely chop both ingredients.
  3. 3. Cut the tofu into cubes.
  4. 4. Wash the pak choi thoroughly. Cut off the hard base at the bottom. Cut the vegetable into eighths.
  5. 5. Heat the oil in a pan over high heat.
  6. 6. Fry the onions together with the garlic, ginger, and tofu.
  7. 7. Season the mixture with salt, pepper, curry powder, and cinnamon.
  8. 8. Add the pak choi to the pan.
  9. 9. Continue frying everything for about 2 minutes.
  10. 10. Stir in the lentils.
  11. 11. Pour in the coconut milk and the vegetable broth.
  12. 12. Let the curry simmer for 10 to 12 minutes.
  13. 13. Wash the coriander leaves. Remove the thick stems.
  14. 14. Finally, adjust the seasoning of the curry to taste.
  15. 15. Serve the curry on plates. Garnish with the fresh coriander.
