🍽️ Lentil-Tofu-Curry with Pak Choi

Ingredients
- yellow onions 1 pc.
- garlic cloves 1 pc.
- ginger, fresh 10 g
- tofu, plain 250 g
- Pak Choi 4 pc.
- oil 2 tbsp
- salt pinch
- pepper, black ground pinch
- curry powder pinch
- cinnamon pinch
- lentils, red 300 g
- coconut milk 400 ml
- vegetable broth 200 ml
- cilantro, fresh 20 g
Instructions
- 1. Cut the onion in half and peel it. Dice the onion into small cubes.
- 2. Peel the garlic and the ginger. Finely chop both ingredients.
- 3. Cut the tofu into cubes.
- 4. Wash the pak choi thoroughly. Cut off the hard base at the bottom. Cut the vegetable into eighths.
- 5. Heat the oil in a pan over high heat.
- 6. Fry the onions together with the garlic, ginger, and tofu.
- 7. Season the mixture with salt, pepper, curry powder, and cinnamon.
- 8. Add the pak choi to the pan.
- 9. Continue frying everything for about 2 minutes.
- 10. Stir in the lentils.
- 11. Pour in the coconut milk and the vegetable broth.
- 12. Let the curry simmer for 10 to 12 minutes.
- 13. Wash the coriander leaves. Remove the thick stems.
- 14. Finally, adjust the seasoning of the curry to taste.
- 15. Serve the curry on plates. Garnish with the fresh coriander.
