  2. 2. Grate about one teaspoon of fine orange zest.
  3. 3. Squeeze the juice out of the orange.
  4. 4. Mix the orange juice, orange zest, sweet mustard, two tablespoons of oil, vinegar, and honey in a bowl to make a sauce.
  5. 5. Place the lentils in a pot and cover them with about 700 milliliters of water.
  6. 6. Bring the water to a boil.
  7. 7. Cook the lentils over medium heat for about six to seven minutes.
  8. 8. Clean the mushrooms with a kitchen towel if necessary.
  9. 9. Cut the mushrooms into quarters or sixth parts depending on their size.
  10. 10. Halve the shallot and peel it.
  11. 11. Dice the shallot into fine cubes.
  12. 12. Wash the chives and shake them dry.
  13. 13. Cut the chives into small rings.
  14. 14. Drain the cooked lentils in a sieve.
  15. 15. Rinse the lentils under cold water.
  16. 16. Heat two tablespoons of oil in a pan until very hot.
  17. 17. Fry the mushrooms in the pan for about four minutes.
  18. 18. Add the lentils, the diced shallot, two teaspoons of vinegar, and two tablespoons of the prepared sauce to the mushrooms.
  19. 19. Mix all ingredients well together.
  20. 20. Season the mixture with salt and pepper to taste.
  21. 21. Fry the ham in another pan without additional fat for about two minutes over medium heat.
  22. 22. Turn the ham occasionally while frying.
  23. 23. Let the fried ham cool on kitchen paper.
  24. 24. Wash the grapes.
  25. 25. Halve the grapes lengthwise.
  26. 26. Wash the lamb's lettuce.
  27. 27. Spin the lamb's lettuce dry.
  28. 28. Place the lamb's lettuce and the grapes in a bowl.
  29. 29. Mix the salad, grapes, and sauce well together.
  30. 30. Season the salad with salt and pepper to taste.
  31. 31. Plate the lentils.
  32. 32. Add the ham and the salad to the lentils.
  33. 33. Serve the lentil mushroom skillet with the ham chips.
