  1. 1. Put the lentils and about 500 milliliters of water into a pot.
  2. 2. Bring the mixture to a boil.
  3. 3. Reduce the heat to medium.
  4. 4. Let the lentils cook until soft for about 20 minutes.
  5. 5. Cut the onions in half and peel off the skin.
  6. 6. Dice the onions very finely.
  7. 7. Peel the garlic cloves.
  8. 8. Finely chop the garlic.
  9. 9. Peel the carrots.
  10. 10. Cut off the hard ends of the carrots.
  11. 11. Grate the carrots coarsely.
  12. 12. Chop the chestnuts and walnuts coarsely.
  13. 13. Wash the thyme under running water.
  14. 14. Shake off the water from the thyme.
  15. 15. Strip the thyme leaves from the stems.
  16. 16. Finely chop the thyme leaves.
  17. 17. Heat 2 tablespoons of oil in a frying pan over medium heat.
  18. 18. Add the diced onions and chopped garlic to the pan.
  19. 19. Sauté the vegetables for about 2 minutes.
  20. 20. Add the grated carrots to the pan.
  21. 21. Fry the carrots for another 2 minutes.
  22. 22. Remove the pan from the heat.
  23. 23. Transfer the sautéed vegetables into a large bowl.

  25. 25. Set the temperature to 180 degrees Celsius for top and bottom heat.
  26. 26. Put the cooked lentils and some cooking liquid into a pot.
  27. 27. Puree the lentils with a hand blender until slightly chunky.
  28. 28. Add the pureed lentils to the vegetables in the bowl.
  29. 29. Add the chopped chestnuts to the vegetable mix.
  30. 30. Add the oat flakes to the mixture.
  31. 31. Add the cornstarch to the mixture.
  32. 32. Add the chopped thyme to the mixture.
  33. 33. Knead everything into a smooth mass.
  34. 34. Season the mixture with salt.
  35. 35. Season the mixture with pepper.
  36. 36. Season the mixture with soy sauce.
  37. 37. Take a loaf pan.
  38. 38. Grease the loaf pan with oil.
  39. 39. Put the loaf mixture into the loaf pan.
  40. 40. Press the mixture down firmly.
  41. 41. Put the pan into the preheated oven.
  42. 42. Bake the loaf for about 45 minutes.
  43. 43. Carefully remove the pan from the oven.
  44. 44. Turn the loaf out onto a cutting board.
  45. 45. Slice the loaf.
  46. 46. Arrange the slices on plates.
  47. 47. Serve the loaf.
