🍽️ Hearty Lentil, Carrot, and Walnut Loaf

Ingredients
- Lentils, brown 250 g
- Onions, yellow 1 pc.
- Garlic cloves 1 pc.
- Carrots 2 pcs.
- Chestnuts - peeled 75 g
- Walnut kernels 80 g
- Thyme, fresh 10 g
- Oil 2 tbsp
- Oats, fine 90 g
- Cornstarch 1 tbsp
- Salt pinch
- Pepper, black ground pinch
- Soy sauce 2 tbsp
Instructions
- 1. Put the lentils and about 500 milliliters of water into a pot.
- 2. Bring the mixture to a boil.
- 3. Reduce the heat to medium.
- 4. Let the lentils cook until soft for about 20 minutes.
- 5. Cut the onions in half and peel off the skin.
- 6. Dice the onions very finely.
- 7. Peel the garlic cloves.
- 8. Finely chop the garlic.
- 9. Peel the carrots.
- 10. Cut off the hard ends of the carrots.
- 11. Grate the carrots coarsely.
- 12. Chop the chestnuts and walnuts coarsely.
- 13. Wash the thyme under running water.
- 14. Shake off the water from the thyme.
- 15. Strip the thyme leaves from the stems.
- 16. Finely chop the thyme leaves.
- 17. Heat 2 tablespoons of oil in a frying pan over medium heat.
- 18. Add the diced onions and chopped garlic to the pan.
- 19. Sauté the vegetables for about 2 minutes.
- 20. Add the grated carrots to the pan.
- 21. Fry the carrots for another 2 minutes.
- 22. Remove the pan from the heat.
- 23. Transfer the sautéed vegetables into a large bowl.
- 24. Turn on the oven.
- 25. Set the temperature to 180 degrees Celsius for top and bottom heat.
- 26. Put the cooked lentils and some cooking liquid into a pot.
- 27. Puree the lentils with a hand blender until slightly chunky.
- 28. Add the pureed lentils to the vegetables in the bowl.
- 29. Add the chopped chestnuts to the vegetable mix.
- 30. Add the oat flakes to the mixture.
- 31. Add the cornstarch to the mixture.
- 32. Add the chopped thyme to the mixture.
- 33. Knead everything into a smooth mass.
- 34. Season the mixture with salt.
- 35. Season the mixture with pepper.
- 36. Season the mixture with soy sauce.
- 37. Take a loaf pan.
- 38. Grease the loaf pan with oil.
- 39. Put the loaf mixture into the loaf pan.
- 40. Press the mixture down firmly.
- 41. Put the pan into the preheated oven.
- 42. Bake the loaf for about 45 minutes.
- 43. Carefully remove the pan from the oven.
- 44. Turn the loaf out onto a cutting board.
- 45. Slice the loaf.
- 46. Arrange the slices on plates.
- 47. Serve the loaf.
