  1. 1. Wash the lemons thoroughly under hot water, dry them, and peel the zest thinly using a peeler. Carefully scrape off the white pith sticking to the peel with the blade of a knife.
  2. 2. Pour the vodka over the lemon peels in a glass that has been rinsed with hot water beforehand, and let it steep for about 3 weeks in a dark place at room temperature.
  3. 3. Then bring the sugar and water to a boil in a pot and let it bubble for about 1 minute. Remove from the heat and let it cool completely.
  4. 4. Strain the vodka through a sieve and gently squeeze the lemon peels. Mix the sugar syrup and lemon vodka well, then bottle the limoncello into clean bottles. Seal the bottles and store in a cool, dark place for 1–2 weeks.
  5. 5. Serve the limoncello very cold; it's best to keep the bottle in the freezer. When well chilled, the limoncello keeps for several months. Cheers!
