🍰 Lime Waffles with Coconut Peaches

Ingredients
- Organic Limes 1 pc.
- Eggs 3 pc.
- Milk 250 ml
- Butter 125 g
- Salt pinch
- Sugar 80 g
- Wheat flour, Type 405 250 g
- Peaches 4 pc.
- Coconut flakes 4 tbsp
- Vanilla ice cream 4 tbsp
Instructions
- 1. Rinse the lime under hot water, grate about 1 tsp of zest finely and squeeze out the juice. Separate the eggs. Beat the egg whites in a bowl with a hand mixer until stiff. In a pot, gently warm the milk over low heat.
- 2. In a bowl, cream the butter with lime zest, salt, and sugar. Add the egg yolks. Stir in the flour, lime juice, and the warmed milk. Gently fold in the egg whites and let the batter rest covered for about 30 minutes.
- 3. Rinse the peaches, halve them, remove the pits, and cut into thin slices. In a pan, toast the coconut flakes over medium heat for approx. 2 minutes without fat.
- 4. Preheat the waffle iron and lightly grease it. Bake waffles from the batter one by one and keep warm. Serve with the peaches, coconut flakes, and vanilla ice cream. Enjoy your meal!
