Ingredients
- Organic Limes 2 pcs
- Butter 60 g
- Eggs 1 pcs
- Wheat flour, Type 405 125 g
- Icing sugar 100 g
- Baking powder 0.5 tsp
Instructions
- 1. Rinse the limes thoroughly and finely grate about 1 teaspoon of zest each. Halve the fruits and squeeze out the juice. Cut the butter into cubes. Separate the egg, keeping the egg white for another use.
- 2. In a bowl, knead the lime zest and 3 tablespoons of lime juice with flour, 40 grams of icing sugar, baking powder, the butter, and the egg yolk into a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for about 2 hours.
- 3. Preheat the oven to 180 °C (convection). Roll out the dough on a floured work surface to about 3 millimeters thick and cut out stars. Place these on baking sheets lined with baking paper and bake lightly for about 10 minutes. Let cool completely afterwards.
- 4. Sift the remaining icing sugar into a bowl and mix it with the remaining lime juice until creamy. Spread this over the lime stars. Enjoy!
