  1. 1. Rinse the limes thoroughly and finely grate about 1 teaspoon of zest each. Halve the fruits and squeeze out the juice. Cut the butter into cubes. Separate the egg, keeping the egg white for another use.
  2. 2. In a bowl, knead the lime zest and 3 tablespoons of lime juice with flour, 40 grams of icing sugar, baking powder, the butter, and the egg yolk into a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for about 2 hours.
  3. 3. Preheat the oven to 180 °C (convection). Roll out the dough on a floured work surface to about 3 millimeters thick and cut out stars. Place these on baking sheets lined with baking paper and bake lightly for about 10 minutes. Let cool completely afterwards.
  4. 4. Sift the remaining icing sugar into a bowl and mix it with the remaining lime juice until creamy. Spread this over the lime stars. Enjoy!
