  2. 2. Bring the vegetable broth to a boil in a pot.
  3. 3. Remove the pot from the heat and cover it.
  4. 4. Stir the couscous into the broth.
  5. 5. Let the couscous swell covered for about 10 minutes.
  6. 6. Rinse the lime under hot water.
  7. 7. Grate about one teaspoon of zest from the lime.
  8. 8. Cut the lime in half.
  9. 9. Squeeze the juice from the lime.
  10. 10. Add the lime zest, one tablespoon of lime juice, one teaspoon of honey, one tablespoon of olive oil, salt, and pepper to a bowl.
  11. 11. Mix the marinade ingredients well.
  12. 12. Place the feta in a baking dish.
  13. 13. Coat the feta evenly with the marinade.
  14. 14. Bake the feta in the oven for about 10 minutes.
  15. 15. Wash the tomatoes.
  16. 16. Remove the stem from the tomatoes.
  17. 17. Cut the tomatoes into small cubes.
  18. 18. Peel the cucumber.
  19. 19. Quarter the cucumber lengthwise.
  20. 20. Remove the seeds from the cucumber.
  21. 21. Dice the cucumber finely.
  22. 22. Wash the parsley and mint.
  23. 23. Shake the herbs dry.
  24. 24. Pluck the leaves from the stems.
  25. 25. Cut the mint into fine strips.
  26. 26. Chop the parsley finely.
  27. 27. Fluff the swollen couscous with a fork.
  28. 28. Mix the couscous with the cucumber, tomatoes, and herbs.
  29. 29. Add two tablespoons of olive oil to the couscous salad.
  30. 30. Season the salad with salt and pepper.
  31. 31. Add two tablespoons of lime juice to the salad.
  32. 32. Wash the zucchini.
  33. 33. Cut off the ends of the zucchini.
  34. 34. Halve the zucchini.
  35. 35. Cut the zucchini into half-centimeter thick wedges.
  36. 36. Heat two tablespoons of olive oil in a pan on high heat.
  37. 37. Fry the zucchini wedges with a little salt for approx. 4 minutes on high heat.
  38. 38. Take the feta out of the oven.
  39. 39. Plate the feta, couscous, and zucchini.
  40. 40. Drizzle the dish with the remaining lime juice to taste.
  41. 41. Serve the dish.
