🍽️ Lime Feta with Grilled Zucchini and Refreshing Couscous Salad

Ingredients
- vegetable broth 300 ml
- couscous 200 g
- organic limes 1 pc.
- honey 1 tsp
- olive oil 5 tbsp
- salt 1 tbsp
- pepper, black ground pinch
- feta 400 g
- vine tomatoes 2 pc.
- salad cucumbers 1 pc.
- parsley, fresh 10 g
- mint, fresh 10 g
- zucchini 2 pc.
Instructions
- 1. Preheat the oven to 160 degrees Celsius with fan.
- 2. Bring the vegetable broth to a boil in a pot.
- 3. Remove the pot from the heat and cover it.
- 4. Stir the couscous into the broth.
- 5. Let the couscous swell covered for about 10 minutes.
- 6. Rinse the lime under hot water.
- 7. Grate about one teaspoon of zest from the lime.
- 8. Cut the lime in half.
- 9. Squeeze the juice from the lime.
- 10. Add the lime zest, one tablespoon of lime juice, one teaspoon of honey, one tablespoon of olive oil, salt, and pepper to a bowl.
- 11. Mix the marinade ingredients well.
- 12. Place the feta in a baking dish.
- 13. Coat the feta evenly with the marinade.
- 14. Bake the feta in the oven for about 10 minutes.
- 15. Wash the tomatoes.
- 16. Remove the stem from the tomatoes.
- 17. Cut the tomatoes into small cubes.
- 18. Peel the cucumber.
- 19. Quarter the cucumber lengthwise.
- 20. Remove the seeds from the cucumber.
- 21. Dice the cucumber finely.
- 22. Wash the parsley and mint.
- 23. Shake the herbs dry.
- 24. Pluck the leaves from the stems.
- 25. Cut the mint into fine strips.
- 26. Chop the parsley finely.
- 27. Fluff the swollen couscous with a fork.
- 28. Mix the couscous with the cucumber, tomatoes, and herbs.
- 29. Add two tablespoons of olive oil to the couscous salad.
- 30. Season the salad with salt and pepper.
- 31. Add two tablespoons of lime juice to the salad.
- 32. Wash the zucchini.
- 33. Cut off the ends of the zucchini.
- 34. Halve the zucchini.
- 35. Cut the zucchini into half-centimeter thick wedges.
- 36. Heat two tablespoons of olive oil in a pan on high heat.
- 37. Fry the zucchini wedges with a little salt for approx. 4 minutes on high heat.
- 38. Take the feta out of the oven.
- 39. Plate the feta, couscous, and zucchini.
- 40. Drizzle the dish with the remaining lime juice to taste.
- 41. Serve the dish.
