🍽️ Chicken with Lime, Creamy Beans, and Rosemary Couscous

Ingredients
- Limes 1 pc.
- Oil 2 tbsp.
- Salt 1 tbsp.
- Chicken breast fillets 600 g
- Green beans 400 g
- Rosemary, fresh 10 g
- Vegetable broth 400 ml
- Couscous 200 g
- Bacon strips 100 g
- Cornstarch 1 tbsp.
- Cream cheese, plain 3 tbsp.
- Pepper, black ground pinch
Instructions
- 1. Rinse the lime under hot water.
- 2. Grate about 1 teaspoon of the lime peel.
- 3. Cut the lime in half and squeeze out the juice.
- 4. Mix the lime zest, juice, oil, and salt in a bowl.
- 5. Rinse the chicken breasts and pat them dry.
- 6. Place the chicken breasts in the lime-oil marinade.
- 7. Bring about 3 liters of salted water to a boil in a large pot.
- 8. Wash the beans and trim the ends.
- 9. Cut the beans diagonally in half.
- 10. Cook the beans in the boiling salted water for about 8 minutes.
- 11. Drain the beans in a sieve, reserving the cooking water.
- 12. Rinse the beans under cold water.
- 13. Rinse the rosemary and shake it dry.
- 14. Bring 300 ml of broth to a boil with the rosemary in a pot.
- 15. Remove the pot from the heat.
- 16. Stir in the couscous.
- 17. Let the couscous sit covered for about 10 minutes to absorb the liquid.
- 18. Heat a pan without fat over high heat.
- 19. Fry the chicken for about 4 minutes on each side.
- 20. Reduce the heat to low to medium.
- 21. Cook the chicken for about 15 more minutes, turning occasionally.
- 22. Fry the bacon in another pot for about 3 minutes over medium heat.
- 23. Deglaze the bacon with 100 ml of vegetable broth.
- 24. Mix the cornstarch with 3 tablespoons of cold water in a bowl.
- 25. Add the cream cheese and the cornstarch mixture to the sauce.
- 26. Stir the sauce well.
- 27. Add the beans to the sauce.
- 28. Season the beans with pepper.
- 29. Cook the beans for about 2 more minutes.
- 30. Remove the rosemary from the couscous.
- 31. Season the couscous with salt and pepper.
- 32. Serve the lime chicken, creamy bacon beans, and rosemary couscous on plates.
