  1. 1. Thoroughly rinse the lemons under running water.
  2. 2. Finely grate the yellow zest from one lemon.
  3. 3. Cut the lemons in half and squeeze out the juice.
  4. 4. Cut the butter into small cubes.
  5. 5. Pour 200 milliliters of lemon juice into a pot.
  6. 6. Add the lemon zest and sugar to the pot.
  7. 7. Bring the mixture to a boil on the stove.
  8. 8. Let the mixture simmer for about 5 minutes.
  9. 9. Whisk the 3 eggs well in a separate bowl.
  10. 10. Take a quarter of the hot lemon syrup and stir it into the eggs.
  11. 11. Pour the egg-syrup mixture back into the pot with the remaining syrup.
  12. 12. Heat the mixture over low to medium heat.
  13. 13. Stir constantly until the cream becomes creamy and slightly thickens.
  14. 14. Remove the pot from the heat.
  15. 15. Stir in the butter cubes until they are melted.
  16. 16. Fill the hot lemon curd into clean jars.
  17. 17. Seal the jars tightly.
