🍰 Homemade Lemon Curd

Ingredients
- Organic lemons 4 pcs
- Butter 90 g
- Sugar 250 g
- Eggs 3 pcs
Instructions
- 1. Thoroughly rinse the lemons under running water.
- 2. Finely grate the yellow zest from one lemon.
- 3. Cut the lemons in half and squeeze out the juice.
- 4. Cut the butter into small cubes.
- 5. Pour 200 milliliters of lemon juice into a pot.
- 6. Add the lemon zest and sugar to the pot.
- 7. Bring the mixture to a boil on the stove.
- 8. Let the mixture simmer for about 5 minutes.
- 9. Whisk the 3 eggs well in a separate bowl.
- 10. Take a quarter of the hot lemon syrup and stir it into the eggs.
- 11. Pour the egg-syrup mixture back into the pot with the remaining syrup.
- 12. Heat the mixture over low to medium heat.
- 13. Stir constantly until the cream becomes creamy and slightly thickens.
- 14. Remove the pot from the heat.
- 15. Stir in the butter cubes until they are melted.
- 16. Fill the hot lemon curd into clean jars.
- 17. Seal the jars tightly.
