🍽️ Warm Asparagus Salad

Ingredients
- Salt pinch
- white asparagus 500 g
- green asparagus 500 g
- cherry tomatoes 250 g
- dill, fresh 20 g
- sunflower oil 4 tbsp
- balsamic vinegar, light 2 tbsp
- pepper, black ground pinch
- sugar 1 tsp
- baguette 1 pcs
Instructions
- 1. Fill a large pot with about 3 liters of water and add salt.
- 2. Thoroughly wash the asparagus under running water.
- 3. Keep the white asparagus whole.
- 4. Peel the bottom third of the green asparagus and remove the woody ends.
- 5. Bring the salted water to a boil.
- 6. Add the white asparagus to the boiling water and cook for approx. 15 minutes.
- 7. Add the green asparagus in the last 8 minutes.
- 8. Wash the tomatoes and cut them into quarters.
- 9. Rinse the dill and shake it dry.
- 10. Pluck off the fine dill tips and chop them roughly.
- 11. Mix oil and vinegar well together in a bowl.
- 12. Season the mixture with pepper, salt, and sugar.
- 13. Remove the asparagus from the cooking water.
- 14. Rinse the asparagus with cold water and let it drain well.
- 15. Cut the asparagus stalks into thirds.
- 16. Mix the asparagus with the chopped dill and the dressing.
- 17. Arrange the salad on a platter.
- 18. Sprinkle the tomato quarters over it.
- 19. Serve the salad with baguette.
