🍽️ Leek Pie with Bacon and Skyr

Ingredients
- Flour, Type 405 250 g
- butter 125 g
- Salt Pinch
- Milk 75 ml
- Eggs 5 pcs.
- Leek 1 pc.
- Onions, yellow 1 pc.
- Oil 2 tbsp
- Bacon strips 125 g
- Skyr, plain 250 g
- Pepper, black ground Pinch
- Gouda, grated 200 g
Instructions
- 1. In a bowl, mix flour with soft butter and salt. Add milk and 1 egg, then knead everything into a smooth dough. Let the dough rest in the refrigerator.
- 2. Preheat the oven to 180 °C (convection). Cut off the ends of the leek, halve it lengthwise, and slice it into strips. Wash the leek and let it drain. Halve the onion, peel it, and chop it finely.
- 3. Heat oil in a pan over high heat and fry the bacon strips for about 2 minutes. Add leek and onions and fry for another 3 minutes. In a bowl, mix Skyr with the remaining eggs, salt, and pepper.
- 4. Roll out the dough on a floured surface and line a greased springform pan with it, creating an approximately 4 cm high edge. Distribute the leek and bacon evenly and pour the egg-milk mixture over it. Sprinkle with Gouda and bake in the oven for about 45 minutes.
