  1. 1. Halve the onions and peel them. Cut the onions into quarters. Peel the garlic and chop it finely. Wash the parsley and dry it. Pluck the leaves from the stems and chop them finely as well. Slice the lamb sausage. Drain the tomato paste in a sieve and cut it into pieces. Also drain the okra pods in a sieve.
  2. 2. Heat a tajine or a frying pan over high heat. Add oil. Fry the lamb sausage and onions for about 2 minutes. Stir in the tomato paste and roast it for about 1 minute. Add the garlic and roast for approx. 1 minute. Deglaze the mixture with 250 ml of water. Let the sauce simmer for about 8 minutes over low heat.
  3. 3. Bring the vegetable broth to a boil in a separate pot. Put the couscous in a bowl. Pour the hot vegetable broth over the couscous. Cover the bowl and let the couscous swell for about 10 minutes.
  4. 4. Add the peppers and okra pods to the tajine. Season the lamb sausage tajine with salt, pepper, and cumin. Garnish the tajine with fresh parsley and some yogurt. Serve the lamb sausage tajine together with the couscous.
