  2. 2. Place the potato cubes in a pot with salted water.
  3. 3. Bring the water to a boil and cook the potatoes on medium heat for about 20 minutes until tender.
  4. 4. Wash the parsley and shake it dry.
  5. 5. Finely chop the parsley.
  6. 6. Place 100 grams of soft butter in a bowl.
  7. 7. Beat the butter with a hand mixer until creamy.
  8. 8. Wash the lemon with hot water and dry it.
  9. 9. Finely grate the lemon zest.
  10. 10. Grind the baguette in a food processor until it forms fine crumbs.
  11. 11. Mix the beaten butter, parsley, egg yolk, lemon zest, and baguette crumbs together in a bowl.
  12. 12. Season the mixture with salt and pepper.
  13. 13. Preheat the oven to 120 degrees Celsius (top and bottom heat).
  14. 14. Line a baking tray with baking paper.
  15. 15. Pat the lamb loins dry with kitchen paper.
  16. 16. Heat rapeseed oil in a non-stick pan.
  17. 17. Sear the lamb loins for about 1 minute on each side.
  18. 18. Place the seared lamb loins on the prepared baking tray.
  19. 19. Evenly distribute the herb crumb mixture over the lamb loins.
  20. 20. Press the crust down slightly so it sticks.
  21. 21. Wash the cherry tomatoes and dry them.
  22. 22. Wash the thyme and rosemary and shake them dry.
  23. 23. Finely chop the thyme and rosemary.
  24. 24. Mix the chopped herbs with the tomatoes and a little olive oil.
  25. 25. Place the tomato mixture on the baking tray next to the lamb loins.
  26. 26. Finish cooking the lamb loins in the oven for about 15 minutes.
  27. 27. Drain the potatoes using the lid.
  28. 28. Mash the potatoes in the pot with a potato masher to make mashed potatoes.
  29. 29. Stir 25 grams of butter and pesto into the mashed potatoes.
  30. 30. Season the mashed potatoes with salt.
