🍽️ Crispy Lamb Leg with Potatoes and Fresh Lemon Peas

Ingredients
- Lamb leg 1 pc.
- Oil 2 tbsp.
- Salt pinch
- Pepper, black ground pinch
- Sweet mustard 3 tbsp.
- small potatoes, mainly firm 800 g
- Onions, yellow 1 pc.
- Organic lemons 1 pc.
- Basil, fresh 10 g
- Olive oil 2 tbsp.
- Peas, frozen 500 g
Instructions
- 1. Preheat your oven to 160 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Rinse the lamb leg under running water. Then pat it completely dry with a kitchen towel.
- 3. Heat two tablespoons of oil in a large pan over high heat.
- 4. Sear the lamb leg on all sides. This takes about five minutes until it has a brown crust.
- 5. Season the meat with salt and pepper. Then coat it thinly with one tablespoon of sweet mustard.
- 6. Place the leg in a baking dish. Put it in the oven and let it cook for about 90 minutes.
- 7. Place the potatoes in a pot and cover them with water. Bring the water to a boil.
- 8. Reduce the heat to medium. Cook the potatoes covered for 20 to 25 minutes until they are soft.
- 9. Drain the cooking water. Cut the potatoes in half, depending on their size.
- 10. Halve an onion and peel it. Cut it into fine cubes.
- 11. Wash a lemon under hot water. Grate about one teaspoon of the zest finely.
- 12. Squeeze the halved lemon to get the juice.
- 13. Wash the basil and shake it dry. Pluck the leaves from the stems.
- 14. Whisk two tablespoons of sweet mustard with one tablespoon of olive oil in a small bowl.
- 15. Add one tablespoon of lemon juice. Season the sauce with salt and pepper.
- 16. Heat one tablespoon of olive oil in a pan over medium heat.
- 17. Sauté the onion cubes and the peas for about four minutes.
- 18. Season the peas with the lemon zest, one tablespoon of lemon juice, salt, and pepper.
- 19. Take the lamb leg out of the oven. Wrap it in aluminum foil and let it rest for ten minutes.
- 20. Slice the lamb leg.
- 21. Arrange the potatoes and lemon peas on a serving platter.
- 22. Place the lamb slices on top.
- 23. Drizzle the meat with the mustard sauce.
- 24. Garnish the dish with the basil leaves. Enjoy your meal!
