  1. 1. Let the salmon thaw overnight in the refrigerator.
  2. 2. Rinse the salmon and pat it dry with kitchen paper.
  3. 3. Cut the salmon into coarse cubes.
  4. 4. Peel the garlic and chop it finely.
  5. 5. Rinse the lemon under hot water.
  6. 6. Grate about one teaspoon of the lemon zest.
  7. 7. Halve the lemon and squeeze out the juice.
  8. 8. In a bowl, mix three tablespoons of oil with the garlic, lemon zest, salt, and pepper.
  9. 9. Toss the salmon cubes in this marinade until well coated.
  10. 10. Wash the spring onions thoroughly and pat them dry.
  11. 11. Cut off the roots of the spring onions.
  12. 12. Slice the spring onions into thin rings.
  13. 13. Heat one tablespoon of oil in a pan over high heat.
  14. 14. Fry the spring onions for about one minute.
  15. 15. Season the spring onions with lemon juice, salt, and pepper.
  16. 16. Mix the spring onions in a bowl with crème fraîche.
  17. 17. Let the salmon cubes drain well.
  18. 18. Thread the salmon cubes and olives alternately onto skewers.
  19. 19. Heat the pan again with one tablespoon of oil.
  20. 20. Fry the skewers on all sides for about six minutes.
