🍽️ Salmon Skewers with Lemon Dip

Ingredients
- salmon fillet, frozen 600 g
- garlic cloves 1 pc.
- organic lemons 1 pc.
- olive oil 5 tbsp
- salt pinch
- pepper, black ground pinch
- spring onions 3 pc.
- crème fraîche 200 g
- olives, green 80 g
Instructions
- 1. Let the salmon thaw overnight in the refrigerator.
- 2. Rinse the salmon and pat it dry with kitchen paper.
- 3. Cut the salmon into coarse cubes.
- 4. Peel the garlic and chop it finely.
- 5. Rinse the lemon under hot water.
- 6. Grate about one teaspoon of the lemon zest.
- 7. Halve the lemon and squeeze out the juice.
- 8. In a bowl, mix three tablespoons of oil with the garlic, lemon zest, salt, and pepper.
- 9. Toss the salmon cubes in this marinade until well coated.
- 10. Wash the spring onions thoroughly and pat them dry.
- 11. Cut off the roots of the spring onions.
- 12. Slice the spring onions into thin rings.
- 13. Heat one tablespoon of oil in a pan over high heat.
- 14. Fry the spring onions for about one minute.
- 15. Season the spring onions with lemon juice, salt, and pepper.
- 16. Mix the spring onions in a bowl with crème fraîche.
- 17. Let the salmon cubes drain well.
- 18. Thread the salmon cubes and olives alternately onto skewers.
- 19. Heat the pan again with one tablespoon of oil.
- 20. Fry the skewers on all sides for about six minutes.
- 21. Serve the skewers with the lemon dip.
