  1. 1. Thaw the salmon overnight in the fridge if possible. Rinse the salmon, pat dry, and chop it very finely. Halve the onion, peel it, and dice it finely. Rinse the dill, shake off excess water, remove the thick stems, and chop it finely. Wash the lemon under hot water and grate about 1 tsp of zest finely.
  2. 2. In a bowl, mix the salmon with the onion, dill, lemon zest, egg, and breadcrumbs until well combined. Season with salt and pepper and let the mixture rest for a short while.
  3. 3. In a separate bowl, mix the sour cream with the honey and mustard. Season the honey-mustard dip with salt and pepper to taste.
  4. 4. Form the salmon mixture into meatballs about 5 cm in size. Heat the oil in a pan over high heat and fry the salmon meatballs in the hot oil for about 6 minutes on each side until golden brown.
  5. 5. Let the salmon meatballs drain on kitchen paper and serve with the honey-mustard dip. Enjoy your meal! Tip: The finer the salmon is chopped, the better the meatball will hold its shape during forming and frying.
