  1. 1. Take 50 grams of butter and place it in a small bowl.
  2. 2. Let the butter soften at room temperature.
  3. 3. Peel the garlic clove.
  4. 4. Finely chop the dried tomatoes, dried rosemary, and garlic.
  5. 5. Stir the chopped ingredients together with thyme and oregano into the soft butter.
  6. 6. Season the butter mixture with salt and pepper to taste.
  7. 7. Set the herb butter aside until you are ready to serve.
  8. 8. Bring about 2 liters of salted water to a boil in a pot.
  9. 9. Add the beans to the boiling water.
  10. 10. Cook the beans for about 10 minutes until they are al dente (firm to the bite).
  11. 11. Drain the beans in a colander.
  12. 12. Melt the remaining 20 grams of butter in the same pot.
  13. 13. Return the drained beans to the pot and toss them briefly in the butter.
  14. 14. Season the beans with a pinch of salt.
  15. 15. Sprinkle 40 grams of grated Parmesan over the hot beans.
  16. 16. Gently mix the Parmesan into the beans.
  17. 17. Set the pot with the beans aside.
  18. 18. Rinse the salmon fillets under cold water.
  19. 19. Pat the fillets dry with a kitchen towel.
  20. 20. Season the salmon on both sides with salt and pepper.
  21. 21. Heat olive oil in a large frying pan.
  22. 22. Place the salmon fillets in the hot pan skin-side down.
  23. 23. Fry the salmon over medium heat for about 3 to 4 minutes.
  24. 24. Turn the salmon pieces over.
  25. 25. Fry the other side for another 2 minutes until the salmon is golden brown.
  26. 26. The salmon is done when it is golden brown on the outside and still slightly translucent (glassy) on the inside.
  27. 27. Divide the Parmesan beans among the plates.
  28. 28. Place the fried salmon fillets on top of the beans.
  29. 29. Place a generous dollop of the tomato-herb butter on each hot fish fillet.
  30. 30. Sprinkle the remaining Parmesan over the beans.
