🍽️ Salmon with Herb-Tomato Butter and Parmesan Beans

Ingredients
- butter 70 g
- garlic cloves 1 pc.
- tomatoes, dried 40 g
- rosemary, dried pinch
- thyme, grated pinch
- oregano, dried pinch
- salt pinch
- pepper, black ground pinch
- princess beans, frozen 600 g
- parmesan, grated 50 g
- salmon fillet with skin 4 pc.
- olive oil 2 tbsp
Instructions
- 1. Take 50 grams of butter and place it in a small bowl.
- 2. Let the butter soften at room temperature.
- 3. Peel the garlic clove.
- 4. Finely chop the dried tomatoes, dried rosemary, and garlic.
- 5. Stir the chopped ingredients together with thyme and oregano into the soft butter.
- 6. Season the butter mixture with salt and pepper to taste.
- 7. Set the herb butter aside until you are ready to serve.
- 8. Bring about 2 liters of salted water to a boil in a pot.
- 9. Add the beans to the boiling water.
- 10. Cook the beans for about 10 minutes until they are al dente (firm to the bite).
- 11. Drain the beans in a colander.
- 12. Melt the remaining 20 grams of butter in the same pot.
- 13. Return the drained beans to the pot and toss them briefly in the butter.
- 14. Season the beans with a pinch of salt.
- 15. Sprinkle 40 grams of grated Parmesan over the hot beans.
- 16. Gently mix the Parmesan into the beans.
- 17. Set the pot with the beans aside.
- 18. Rinse the salmon fillets under cold water.
- 19. Pat the fillets dry with a kitchen towel.
- 20. Season the salmon on both sides with salt and pepper.
- 21. Heat olive oil in a large frying pan.
- 22. Place the salmon fillets in the hot pan skin-side down.
- 23. Fry the salmon over medium heat for about 3 to 4 minutes.
- 24. Turn the salmon pieces over.
- 25. Fry the other side for another 2 minutes until the salmon is golden brown.
- 26. The salmon is done when it is golden brown on the outside and still slightly translucent (glassy) on the inside.
- 27. Divide the Parmesan beans among the plates.
- 28. Place the fried salmon fillets on top of the beans.
- 29. Place a generous dollop of the tomato-herb butter on each hot fish fillet.
- 30. Sprinkle the remaining Parmesan over the beans.
