🍽️ Grilled Salmon with Asparagus, Potatoes, and Aioli

Ingredients
- potatoes, waxy 1 kg
- green asparagus 2 bunch
- garlic bulb 1 pc
- lemons 1 pc
- chives, fresh 5 g
- olive oil 3 tbsp
- salmon fillet, marinated 4 pc
- salt pinch
- pepper, black ground pinch
- aioli 4 tbsp
Instructions
- 1. Place the potatoes in a pot and cover them completely with water.
- 2. Bring the water to a boil on the highest setting.
- 3. Reduce the heat to medium, cover the pot, and cook the potatoes for about 25 minutes.
- 4. Thoroughly wash the asparagus.
- 5. Peel the bottom third of the asparagus if you wish.
- 6. Snap off the woody ends of the asparagus stalks.
- 7. Halve the head of garlic.
- 8. Cut the lemon into wedges.
- 9. Cut the chives into fine rings.
- 10. Drain the cooked potatoes.
- 11. Return the potatoes to the pot.
- 12. Mix the potatoes with one tablespoon of olive oil.
- 13. Place the green asparagus in a separate bowl.
- 14. Add the halved garlic head to the asparagus.
- 15. Pour two tablespoons of olive oil over the asparagus and garlic.
- 16. Mix everything well so that everything is evenly coated.
- 17. Preheat your grill.
- 18. Place the salmon fillet on the grill with the skin side down.
- 19. Grill the salmon for about 5 minutes.
- 20. Carefully turn the salmon.
- 21. Grill the other side for another 2 minutes.
- 22. Place the potatoes, asparagus, and garlic on the grill.
- 23. Grill the vegetables for about 5 to 7 minutes.
- 24. Remove the grilled potatoes, asparagus, and garlic from the grill.
- 25. Place them on a large serving platter.
- 26. Mash the potatoes slightly flat if you like.
- 27. Season the grilled vegetables with salt and pepper.
- 28. Place the grilled salmon on top of the vegetables.
- 29. Drizzle aioli over the salmon.
- 30. Sprinkle the dish with the chopped chive rings.
- 31. Garnish with the lemon wedges.
- 32. Squeeze the grilled garlic out of its skin.
- 33. Lightly crush the garlic and serve it together with the potatoes and asparagus.
