  1. 1. Halve the avocados and remove the pits.
  2. 2. Scoop the flesh out of the skin carefully with a spoon.
  3. 3. Cut the avocado flesh into thin strips.
  4. 4. Rinse the parsley and dill under running water.
  5. 5. Pat the herbs dry with a kitchen towel.
  6. 6. Pluck the leaves off the stems.
  7. 7. Chop the herbs roughly.
  8. 8. Put the cress, parsley, and dill into a bowl.
  9. 9. Mix the herbs well together.
  10. 10. Whisk the eggs in a separate bowl.
  11. 11. Add the milk to the eggs.
  12. 12. Season the mixture with salt and pepper.
  13. 13. Stir everything vigorously until well whisked.
  14. 14. Heat a frying pan over medium heat.
  15. 15. Melt one teaspoon of butter in the pan.
  16. 16. Pour a quarter of the egg mixture into the hot pan.
  17. 17. Cook the omelette for about two minutes until it sets.
  18. 18. Carefully flip the omelette.
  19. 19. Cook the other side for another minute or so.
  20. 20. Remove the finished omelette from the pan.
  21. 21. Repeat the process for the remaining omelettes.
  22. 22. Place the mixed herbs on the omelettes.
  23. 23. Distribute the avocado strips on top.
  24. 24. Add the salmon as a topping.
  25. 25. Plate the omelettes.
