🍽️ Salmon in Savoy Cabbage Wraps with Rice

Ingredients
- Salmon fillet, frozen 600 g
- Salt pinch
- Savoy cabbage 1 pc.
- Oranges 2 pc.
- Pepper, black ground pinch
- Smoked salmon 4 slices
- White wine, dry 200 ml
- Vegetable broth 100 ml
- Butter 3 tbsp
- Whipping cream 200 g
- Nutmeg, ground pinch
- Long grain rice 300 g
Instructions
- 1. Let the salmon fillets thaw overnight in the refrigerator.
- 2. Bring about 2 liters of salted water to a boil in a large pot.
- 3. Separate 8 large savoy cabbage leaves and remove the thick central ribs.
- 4. Blanchish the leaves in the boiling salted water for about 3 minutes until they are soft.
- 5. Drain the leaves, rinse them with cold water, and pat them dry carefully.
- 6. Cut the remaining savoy cabbage into strips and remove the thick central ribs.
- 7. Peel the orange completely with a sharp knife, ensuring the white pith is also removed.
- 8. Cut out the fruit segments from the membranes using V-shaped cuts.
- 9. Preheat the oven to 180 °C (top and bottom heat).
- 10. Rinse the salmon fillets and pat them dry carefully.
- 11. Season the fillets with salt and pepper.
- 12. Place one fillet on two overlapping savoy cabbage leaves.
- 13. Add some orange segments and a slice of smoked salmon on top.
- 14. Fold the savoy cabbage over the filling and secure the packets with wooden skewers.
- 15. Place the packets side by side in a greased baking dish.
- 16. Pour 50 ml of wine and broth over the packets.
- 17. Cook the packets in the preheated oven for about 25 minutes.
- 18. Baste the packets once or twice with some of the cooking liquid.
- 19. Meanwhile, melt butter in a pot over medium heat.
- 20. Sauté the savoy cabbage strips for about 5 minutes.
- 21. Deglaze the vegetables with the remaining wine and cream.
- 22. Season the mixture with salt, pepper, and nutmeg.
- 23. Cook the vegetables covered for about 10–12 minutes.
- 24. Adjust the seasoning to taste.
- 25. Bring the rice to a boil in another pot with about 600 ml of salted water.
- 26. Cook the rice for about 12 minutes.
- 27. Plate the salmon in the savoy cabbage wrap together with the vegetables and rice.
- 28. Serve the dish and enjoy your meal!
