  1. 1. Let the salmon fillets thaw overnight in the refrigerator.
  2. 2. Bring about 2 liters of salted water to a boil in a large pot.
  3. 3. Separate 8 large savoy cabbage leaves and remove the thick central ribs.
  4. 4. Blanchish the leaves in the boiling salted water for about 3 minutes until they are soft.
  5. 5. Drain the leaves, rinse them with cold water, and pat them dry carefully.
  6. 6. Cut the remaining savoy cabbage into strips and remove the thick central ribs.
  7. 7. Peel the orange completely with a sharp knife, ensuring the white pith is also removed.
  8. 8. Cut out the fruit segments from the membranes using V-shaped cuts.
  9. 9. Preheat the oven to 180 °C (top and bottom heat).
  10. 10. Rinse the salmon fillets and pat them dry carefully.
  11. 11. Season the fillets with salt and pepper.
  12. 12. Place one fillet on two overlapping savoy cabbage leaves.
  13. 13. Add some orange segments and a slice of smoked salmon on top.
  14. 14. Fold the savoy cabbage over the filling and secure the packets with wooden skewers.
  15. 15. Place the packets side by side in a greased baking dish.
  16. 16. Pour 50 ml of wine and broth over the packets.
  17. 17. Cook the packets in the preheated oven for about 25 minutes.
  18. 18. Baste the packets once or twice with some of the cooking liquid.
  19. 19. Meanwhile, melt butter in a pot over medium heat.
  20. 20. Sauté the savoy cabbage strips for about 5 minutes.
  21. 21. Deglaze the vegetables with the remaining wine and cream.
  22. 22. Season the mixture with salt, pepper, and nutmeg.
  23. 23. Cook the vegetables covered for about 10–12 minutes.
  24. 24. Adjust the seasoning to taste.
  25. 25. Bring the rice to a boil in another pot with about 600 ml of salted water.
  26. 26. Cook the rice for about 12 minutes.
  27. 27. Plate the salmon in the savoy cabbage wrap together with the vegetables and rice.
  28. 28. Serve the dish and enjoy your meal!
