  1. 1. Thaw the salmon and prawns overnight in the refrigerator.
  2. 2. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  3. 3. Peel the potatoes and wash them.
  4. 4. Cut the potatoes into small cubes.
  5. 5. Place the potato cubes in a pot and cover them with salted water.
  6. 6. Cook the potatoes for about 15 minutes.
  7. 7. Drain the potatoes in a colander.
  8. 8. Collect the cooking water in a container.
  9. 9. Halve the onions and peel them.
  10. 10. Finely dice the onions.
  11. 11. Halve the leeks lengthwise.
  12. 12. Remove the root end from the leeks.
  13. 13. Slice the leeks.
  14. 14. Wash the leek slices in a colander.
  15. 15. Heat 2 tablespoons of oil in a frying pan on high heat.
  16. 16. Fry the onions and leeks for about 5 minutes.
  17. 17. Wash the salmon.
  18. 18. Pat the salmon dry.
  19. 19. Roughly cube the salmon.
  20. 20. Wash the prawns.
  21. 21. Pat the prawns dry.
  22. 22. Peel the prawns.
  23. 23. Wash the dill.
  24. 24. Shake the dill dry.
  25. 25. Remove the thick stems from the dill.
  26. 26. Chop the dill.
  27. 27. Wash the lemon with hot water.
  28. 28. Finely grate about 1 teaspoon of lemon zest.
  29. 29. Halve the lemon.
  30. 30. Squeeze the juice from the lemon.
  31. 31. Place the potatoes, onions, leeks, salmon, prawns, dill, and lemon zest in a bowl.
  32. 32. Add double cream and 100 milliliters of the collected potato cooking water.
  33. 33. Mix all ingredients well.
  34. 34. Season the mixture with salt, pepper, and nutmeg.
  35. 35. Add 2 tablespoons of lemon juice.
  36. 36. Grease a tart pan with butter.
  37. 37. Pour the fish and leek mixture into the pan.
  38. 38. Place puff pastry over the baking dish.
  39. 39. Press the pastry lightly at the edge.
  40. 40. Trim the excess pastry.
  41. 41. Cut out stars from the remaining pastry as desired.
  42. 42. Arrange the pastry stars on the puff pastry.
  43. 43. Whisk an egg in a small bowl.
  44. 44. Brush the puff pastry lid with the egg.
  45. 45. Bake the salmon and prawn pie for about 25 minutes until golden brown in the oven.
