  1. 1. Take the salmon out of the fridge and let it reach room temperature for a moment.
  2. 2. Cut the lemon in half and squeeze out the juice.
  3. 3. Stir 2 tablespoons of lemon juice with 1 tablespoon of sugar in a small bowl until the sugar is completely dissolved.
  4. 4. Cut the onion in half, peel it, and slice it into thin strips.
  5. 5. Place the onion strips in the lemon-sugar mixture and let them marinate briefly.
  6. 6. Cut the avocados in half and remove the pits.
  7. 7. Carefully scoop the flesh out of the skin with a spoon.
  8. 8. Place the avocado flesh in a medium bowl and mash it with a fork.
  9. 9. Add 1 tablespoon of lemon juice and season the mixture generously with salt and pepper.
  10. 10. Slice the bagels in half and toast them lightly in a toaster if you like.
  11. 11. Spread the avocado cream generously over the cut sides of the bagels.
  12. 12. Place the salmon slices generously on the avocado-spread bottom half.
  13. 13. Take the marinated onions out of the liquid and place them on top of the salmon.
  14. 14. Trim the cress and scatter it over the salmon.
  15. 15. Cover the bagel with the top half and serve immediately.
