🍽️ Autumn Pumpkin Turkey Stew with Rice

Ingredients
- Hokkaido pumpkin 1 pc
- onions, yellow 2 pcs
- apples, red 2 pcs
- turkey breast fillet 600 g
- oil 4 tbsp
- salt pinch
- pepper, black ground pinch
- cumin pinch
- cinnamon pinch
- curry powder pinch
- poultry broth 300 ml
- long grain rice 300 g
- organic lemons 1 pc
- pumpkin seeds 4 tbsp
Instructions
- 1. Rinse the pumpkin under running water.
- 2. Cut the pumpkin in half.
- 3. Remove the seeds with a spoon.
- 4. Dice the pumpkin flesh into small cubes.
- 5. Cut the onion in half.
- 6. Peel off the outer skin of the onion.
- 7. Slice the onion into thin strips.
- 8. Wash the apples thoroughly.
- 9. Cut the apples into quarters.
- 10. Remove the core from the apple pieces.
- 11. Dice the apple pieces as well.
- 12. Rinse the turkey breast under cold water.
- 13. Pat the meat dry with a kitchen towel.
- 14. Cut the turkey breast into bite-sized pieces.
- 15. Heat two tablespoons of oil in a large pot over high heat.
- 16. Sear the turkey pieces for about four minutes.
- 17. Remove the meat from the pot and set it aside.
- 18. Season the turkey meat with salt, pepper, and cumin.
- 19. Add another two tablespoons of oil to the same pot.
- 20. Sauté the onions, pumpkin, and apples for about four minutes.
- 21. Season the vegetables with salt, pepper, cinnamon, and curry.
- 22. Deglaze the mixture with broth.
- 23. Cover the pot with a lid.
- 24. Simmer the stew on medium heat for about ten minutes.
- 25. Add the seasoned turkey pieces to the pot after five minutes.
- 26. Put the rice into a separate pot.
- 27. Pour about 700 milliliters of salted water over it.
- 28. Bring the water to a boil.
- 29. Cook the rice covered on medium heat for about ten minutes.
- 30. Rinse the lemon under running water.
- 31. Cut the lemon in half.
- 32. Squeeze the juice from the lemon.
- 33. Coarsely chop the pumpkin seeds.
- 34. Add the chopped seeds to the stew.
- 35. Finish the stew with lemon juice and additional spices to taste.
- 36. Serve the stew together with the rice on plates.
