  1. 1. Wash the pumpkin thoroughly. Cut off the ends. Cut the pumpkin in half. Remove the seeds with a spoon. Grate the pumpkin coarsely, including the skin.
  2. 2. Wash the spring onions. Dry them well. Cut off the root ends. Slice the spring onions into thin rings.
  3. 3. Peel the ginger. Finely chop the ginger.
  4. 4. Take a large bowl. Add the grated pumpkin pieces. Add half of the spring onion rings. Add the chopped ginger. Add the eggs. Add the starch.
  5. 5. Season the mixture with salt. Season the mixture with pepper. Season the mixture with cinnamon. Mix everything well.
  6. 6. Take a frying pan. Add half of the oil. Heat the oil over medium heat.
  7. 7. Take half of the pumpkin mixture. Shape it into small fritters about 5 cm in diameter. Place the fritters in the hot pan.
  8. 8. Fry the fritters on both sides for about 3 minutes. Fry them until golden brown. Remove the finished fritters from the pan. Place them on kitchen paper to drain the oil.
  9. 9. Repeat the process with the remaining pumpkin mixture and the remaining oil. Fry these fritters until golden brown as well and let them drain on kitchen paper.
  10. 10. Wash the pear. Cut the pear into quarters. Remove the seeds and the stem. Cut the pear into small cubes.
  11. 11. Wash the lemon. Grate about 1 teaspoon of the zest. Cut the lemon in half. Squeeze the juice from the lemon.
  12. 12. Take a clean bowl. Add the pear cubes. Add the remaining spring onion rings. Add the quark. Add the honey. Add the lemon zest.
  13. 13. Add 2 teaspoons of lemon juice. Mix the dip ingredients well. Taste the dip and adjust the amount if necessary.
  14. 14. Place the pumpkin fritters on the plates. Add the pear quark dip. Serve the dish immediately.
