🍽️ Crispy Pumpkin Crostini with Apples

Ingredients
- Onions, red 1 pc
- Hokkaido pumpkin 1 pc
- Apples, red 2 pcs
- Thyme, fresh 10 g
- Oil 2 tbsp
- Salt pinch
- Pepper, black ground pinch
- Ciabatta bread 1 pc
- Balsamic vinegar, dark 2 tbsp
Instructions
- 1. Halve the onion and remove the outer skin.
- 2. Dice the peeled onion into small cubes.
- 3. Thoroughly wash the pumpkin under running water.
- 4. Halve the pumpkin and remove the seeds.
- 5. Peel the apples and remove the core.
- 6. Slice the apples into approximately 0.5 cm thick slices.
- 7. Wash the thyme and let it drain well.
- 8. Pluck the thyme leaves from the stems.
- 9. Preheat the oven to 200 °C fan-assisted.
- 10. Line a baking tray with baking paper.
- 11. Spread the pumpkin, apple slices, and onion cubes on the tray.
- 12. Drizzle some oil over the vegetables and fruits.
- 13. Season everything with salt and pepper to taste.
- 14. Bake the mixture in the oven for about 15 minutes.
- 15. Slice the ciabatta breads into slices.
- 16. Place the ciabatta slices in the hot oven.
- 17. Toast the breads for approx. 3 minutes on one side.
- 18. Turn the breads and toast them for another 3 minutes.
- 19. Remove the ciabatta slices from the oven and place them on plates.
- 20. Place the baked pumpkin and apple mixture into a bowl.
- 21. Add some balsamic vinegar.
- 22. Mix the ingredients in the bowl well.
- 23. Spoon the mixture onto the ciabatta slices.
- 24. Sprinkle the crostini with the fresh thyme leaves.
- 25. Serve the pumpkin crostini immediately.
