  1. 1. Halve the onion and remove the outer skin.
  2. 2. Dice the peeled onion into small cubes.
  3. 3. Thoroughly wash the pumpkin under running water.
  4. 4. Halve the pumpkin and remove the seeds.
  5. 5. Peel the apples and remove the core.
  6. 6. Slice the apples into approximately 0.5 cm thick slices.
  7. 7. Wash the thyme and let it drain well.
  8. 8. Pluck the thyme leaves from the stems.
  9. 9. Preheat the oven to 200 °C fan-assisted.
  10. 10. Line a baking tray with baking paper.
  11. 11. Spread the pumpkin, apple slices, and onion cubes on the tray.
  12. 12. Drizzle some oil over the vegetables and fruits.
  13. 13. Season everything with salt and pepper to taste.
  14. 14. Bake the mixture in the oven for about 15 minutes.
  15. 15. Slice the ciabatta breads into slices.
  16. 16. Place the ciabatta slices in the hot oven.
  17. 17. Toast the breads for approx. 3 minutes on one side.
  18. 18. Turn the breads and toast them for another 3 minutes.
  19. 19. Remove the ciabatta slices from the oven and place them on plates.
  20. 20. Place the baked pumpkin and apple mixture into a bowl.
  21. 21. Add some balsamic vinegar.
  22. 22. Mix the ingredients in the bowl well.
  23. 23. Spoon the mixture onto the ciabatta slices.
  24. 24. Sprinkle the crostini with the fresh thyme leaves.
  25. 25. Serve the pumpkin crostini immediately.
