🍽️ Autumn Flammkuchen with Pumpkin, Pear, and Lamb's Lettuce

Ingredients
- thyme, fresh 5 g
- crème fraîche 200 g
- salt pinch
- pepper, black ground pinch
- hokkaido pumpkin 1 pc.
- pears 2 pc.
- onions, red 1 pc.
- pizza dough with tomato sauce 1 pc.
- oil 8 tbsp
- pumpkin seeds 50 g
- vinegar 3 tbsp
- honey 1 tbsp
- water 2 tbsp
- sugar pinch
- corn salad 150 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 2. Wash the thyme and pat it dry with a kitchen towel.
- 3. Pick the thyme leaves off the stems and chop them finely.
- 4. Mix the chopped thyme leaves in a bowl with the crème fraîche.
- 5. Season the crème fraîche mixture with salt and pepper.
- 6. Wash the pumpkin thoroughly.
- 7. Cut off the ends of the pumpkin.
- 8. Halve the pumpkin and remove the seeds with a spoon.
- 9. Slice the pumpkin halves into rounds about 0.2 centimeters thick.
- 10. Wash the pears.
- 11. Slice the pears into rounds about 0.2 centimeters thick, cutting down to the core.
- 12. Halve the red onion.
- 13. Peel the halved onion.
- 14. Slice the onion into thin rings.
- 15. Unroll the flammkuchen dough along with the baking paper.
- 16. Spread the thyme crème fraîche mixture evenly over the dough.
- 17. Place the pumpkin slices on the spread dough.
- 18. Place the pear slices on top of the pumpkin.
- 19. Distribute the onion rings over the flammkuchen.
- 20. Drizzle the flammkuchen with one tablespoon of oil.
- 21. Season the flammkuchen with salt and pepper.
- 22. Place the flammkuchen on a baking sheet.
- 23. Bake the flammkuchen in the oven for about 15 minutes.
- 24. Swap the baking sheets after about 8 minutes.
- 25. Clean the bowl you used to mix the crème fraîche.
- 26. Heat a frying pan on high heat.
- 27. Toast the pumpkin seeds in the hot pan for 2 to 3 minutes without fat.
- 28. Shake the pan constantly so the seeds do not burn.
- 29. Salt the toasted pumpkin seeds.
- 30. Place the pumpkin seeds on a plate to the side.
- 31. Put 6 tablespoons of oil into the cleaned bowl.
- 32. Add 3 tablespoons of vinegar to the bowl.
- 33. Add 1 tablespoon of honey to the bowl.
- 34. Add 2 tablespoons of water to the bowl.
- 35. Season the dressing with salt, pepper, and sugar.
- 36. Wash the lamb's lettuce.
- 37. Spin the lamb's lettuce dry.
- 38. Toss the lamb's lettuce in the bowl with the dressing.
- 39. Take the flammkuchen out of the oven.
- 40. Cut the flammkuchen into pieces.
- 41. Serve the flammkuchen together with the lamb's lettuce on plates.
- 42. Sprinkle the dish with the toasted pumpkin seeds.
