🍽️ Crispy Chicken Sandwich with Avocado Dip and Fries

Ingredients
- potatoes, mainly waxy 800 g
- oil 4 tbsp
- Cornflakes 100 g
- yogurt, plain 150 g
- salt pinch
- pepper, black ground pinch
- sugar pinch
- chicken breast fillets 600 g
- organic limes 1 pc.
- avocado 2 pc.
- ciabatta bread 2 pc.
- mini cucumbers 4 pc.
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan.
- 2. Wash the potatoes thoroughly.
- 3. Cut the potatoes into sticks about 1 cm thick.
- 4. Toss the potato sticks in a bowl with 2 tablespoons of oil.
- 5. Place the fries on a baking sheet lined with baking paper.
- 6. Bake the fries in the oven for about 25 minutes until crispy.
- 7. Turn the fries after about 15 minutes.
- 8. Put the cornflakes into a freezer bag.
- 9. Crush the cornflakes with your hands or a rolling pin.
- 10. Mix the yogurt in a cup with salt, pepper, and sugar.
- 11. Fill a deep plate with about two-thirds of the yogurt.
- 12. Put the crumbled cornflakes into a second deep plate.
- 13. Rinse the chicken under running water.
- 14. Pat the chicken dry.
- 15. Halve the chicken horizontally.
- 16. Carefully slice the meat with a sharp knife between your palm and the cutting board.
- 17. Coat the chicken in the yogurt first.
- 18. Then roll the chicken in the cornflakes.
- 19. Place the chicken on a second baking sheet.
- 20. Leave space for the ciabatta bread on the sheet.
- 21. Bake the chicken for approx. 12 to 14 minutes in the oven.
- 22. Wash the lime in the meantime.
- 23. Halve the lime.
- 24. Squeeze the juice from the lime.
- 25. Halve the avocado.
- 26. Remove the pit of the avocado.
- 27. Scoop the avocado flesh out of the skin with a spoon.
- 28. Puree the avocado flesh in a tall container with 2 tablespoons of oil and 1 tablespoon of lime juice.
- 29. Season the dip with salt and pepper.
- 30. Store the dip covered in the refrigerator until serving.
- 31. Moisten the ciabatta bread slightly.
- 32. Salt the ciabatta bread.
- 33. Place the ciabatta together with the chicken on the baking sheet.
- 34. Bake the bread for about 5 minutes until golden brown.
- 35. Wash the cucumbers.
- 36. Peel the cucumbers if desired.
- 37. Halve the cucumbers.
- 38. Cut the cucumbers diagonally into long sticks.
- 39. Take the ciabatta, fries, and chicken out of the oven.
- 40. Halve the bread diagonally.
- 41. Slice the bread halves lengthwise.
- 42. Spread the cut surfaces with yogurt and avocado dip as desired.
- 43. Top the bread with chicken and cucumber.
- 44. Salt the fries.
- 45. Serve the fries together with the crispy chicken sandwiches and the dips.
