  1. 1. Preheat the oven to 220 degrees Celsius using the top and bottom heat setting.
  2. 2. Line a baking tray with baking paper.
  3. 3. Wash the apples thoroughly.
  4. 4. Remove the stem and the core from the apples.
  5. 5. Cut the apple flesh into cubes of about 1 cm.
  6. 6. Place the apple cubes, brown sugar, raisins, cinnamon, and vanilla sugar into a bowl.
  7. 7. Mix the ingredients in the bowl well together.
  8. 8. Pour the apple juice and vanilla pudding powder into a pot.
  9. 9. Stir the mixture in the pot well until it is smooth.
  10. 10. Bring the pudding mixture to a boil.
  11. 11. Stir the prepared apple mixture into the hot liquid.
  12. 12. Let the apple filling cool down.
  13. 13. Divide the puff pastry on the baking tray into 8 equal rectangles.
  14. 14. Distribute the cooled apple filling onto the pastry rectangles.
  15. 15. Cover only one half of each rectangle with the filling.
  16. 16. Fold the empty half of the pastry over the filling.
  17. 17. Press the edges of the pockets firmly together with a fork.
  18. 18. Brush the apple pockets with a brush using the soy drink.
  19. 19. Sprinkle some sugar over the brushed pockets.
  20. 20. Poke the surface of the pockets several times with a fork.
  21. 21. Bake the pockets for about 12 minutes until golden brown.
  22. 22. Let the apple pockets cool down briefly.
  23. 23. Sift powdered sugar over the finished pockets.
  24. 24. Serve the apple pockets and enjoy them.
