🍰 Crispy Apple Pockets

Ingredients
- Apples, red 2 pcs
- Brown sugar 10 g
- Raisins 40 g
- Cinnamon 1 tsp
- Vanilla sugar 0.5 packet
- Apple juice 80 ml
- Vanilla pudding powder 10 g
- Puff pastry 1 pcs
- Soy drink 20 ml
- Sugar 4 tbsp
- Powdered sugar 2 tbsp
Instructions
- 1. Preheat the oven to 220 degrees Celsius using the top and bottom heat setting.
- 2. Line a baking tray with baking paper.
- 3. Wash the apples thoroughly.
- 4. Remove the stem and the core from the apples.
- 5. Cut the apple flesh into cubes of about 1 cm.
- 6. Place the apple cubes, brown sugar, raisins, cinnamon, and vanilla sugar into a bowl.
- 7. Mix the ingredients in the bowl well together.
- 8. Pour the apple juice and vanilla pudding powder into a pot.
- 9. Stir the mixture in the pot well until it is smooth.
- 10. Bring the pudding mixture to a boil.
- 11. Stir the prepared apple mixture into the hot liquid.
- 12. Let the apple filling cool down.
- 13. Divide the puff pastry on the baking tray into 8 equal rectangles.
- 14. Distribute the cooled apple filling onto the pastry rectangles.
- 15. Cover only one half of each rectangle with the filling.
- 16. Fold the empty half of the pastry over the filling.
- 17. Press the edges of the pockets firmly together with a fork.
- 18. Brush the apple pockets with a brush using the soy drink.
- 19. Sprinkle some sugar over the brushed pockets.
- 20. Poke the surface of the pockets several times with a fork.
- 21. Bake the pockets for about 12 minutes until golden brown.
- 22. Let the apple pockets cool down briefly.
- 23. Sift powdered sugar over the finished pockets.
- 24. Serve the apple pockets and enjoy them.
