  5. 5. Remove the tough stem and seeds from the bell peppers.
  6. 6. Cut the bell peppers into thin strips.
  7. 7. Wash the tomatoes.
  8. 8. Remove the stem from the tomatoes.
  9. 9. Chop the tomatoes into coarse chunks.
  10. 10. Peel the garlic.
  11. 11. Finely chop the garlic.
  12. 12. Rinse the chili peppers.
  13. 13. Dry the chili peppers with a kitchen towel.
  14. 14. Heat the oil in a pot over medium heat.
  15. 15. Fry the chili peppers for about 2 minutes.
  16. 16. Remove the chili peppers from the pot and set them aside.
  17. 17. Add the bell pepper strips and onion cubes to the pot.
  18. 18. Fry the vegetables for about 5 minutes.
  19. 19. Add the tomatoes and garlic to the pot.
  20. 20. Fry the mixture for another 3 minutes.

  22. 22. Let the stew simmer for about 20 minutes.

  25. 25. Pluck or cut the leaves from the stems.

  27. 27. Whisk the eggs in a bowl.

  29. 29. Stir the herbs into the stew.
  30. 30. Pour the beaten eggs into the stew while stirring constantly.
