🍲 Classic Croatian Vegetable Stew

Ingredients
- yellow onions 1 pc.
- red bell peppers 1 pc.
- yellow bell peppers 2 pc.
- green bell peppers 1 pc.
- vine tomatoes 6 pc.
- garlic cloves 2 pc.
- hot pepper mix 1 pc.
- olive oil 3 tbsp
- vegetable broth 500 ml
- dill, fresh 10 g
- parsley, fresh 10 g
- thyme, fresh 5 g
- eggs 2 pc.
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Halve the onions and remove the outer skins.
- 2. Dice the onions into small cubes.
- 3. Wash the bell peppers thoroughly.
- 4. Split the bell peppers in half.
- 5. Remove the tough stem and seeds from the bell peppers.
- 6. Cut the bell peppers into thin strips.
- 7. Wash the tomatoes.
- 8. Remove the stem from the tomatoes.
- 9. Chop the tomatoes into coarse chunks.
- 10. Peel the garlic.
- 11. Finely chop the garlic.
- 12. Rinse the chili peppers.
- 13. Dry the chili peppers with a kitchen towel.
- 14. Heat the oil in a pot over medium heat.
- 15. Fry the chili peppers for about 2 minutes.
- 16. Remove the chili peppers from the pot and set them aside.
- 17. Add the bell pepper strips and onion cubes to the pot.
- 18. Fry the vegetables for about 5 minutes.
- 19. Add the tomatoes and garlic to the pot.
- 20. Fry the mixture for another 3 minutes.
- 21. Pour the vegetable broth into the pot.
- 22. Let the stew simmer for about 20 minutes.
- 23. Wash the herbs thoroughly.
- 24. Shake the herbs dry.
- 25. Pluck or cut the leaves from the stems.
- 26. Chop the herbs coarsely.
- 27. Whisk the eggs in a bowl.
- 28. Beat the eggs well.
- 29. Stir the herbs into the stew.
- 30. Pour the beaten eggs into the stew while stirring constantly.
- 31. Let the eggs set in the stew.
- 32. Season the stew with salt and pepper to taste.
- 33. Serve the Sataras vegetable stew hot.
