Ingredients
- White cabbage 1 pc.
- Salt pinch
- Onions, yellow 1 pc.
- South Tyrol bacon 150 g
- Sunflower oil 4 tbsp
- Vinegar 3 tbsp
- Poultry broth 125 ml
- Cumin, whole pinch
- Pepper, white ground pinch
Instructions
- 1. Wash the white cabbage thoroughly, remove wilted leaves, quarter it, cut out the core, and slice or shred the cabbage into thin strips. In a bowl, mix the white cabbage with 1 tsp salt and let it rest covered for about 1 hour.
- 2. Cut the onion in half, peel it, and dice it finely. Remove the rind and any bones from the bacon, and also cut the bacon into fine cubes.
- 3. Knead the cabbage lightly, then drain it well in a sieve and taste it. If it is too salty, rinse it briefly and drain it again.
- 4. Heat 1 tbsp oil in a pan over high heat and fry the bacon for about 1 minute. Then add the onion and fry for another 1 minute. Deglaze with vinegar and broth, add the remaining oil, and bring to a boil once. Season with cumin, pepper, and salt to taste.
- 5. Place the cabbage in the bowl, pour the hot dressing over it, and mix well. Let it steep covered for at least 2 hours or overnight. Taste the salad again before serving. Enjoy your meal!
