  1. 1. Wash the herbs thoroughly.
  2. 2. Shake the herbs lightly to remove excess water.
  3. 3. Reserve a few stems for decoration.
  4. 4. Roughly chop the rest of the herbs.
  5. 5. Halve the onion.
  6. 6. Peel the onion.
  7. 7. Dice the onion finely.
  8. 8. Melt 2 tablespoons of butter in a pot over medium heat.
  9. 9. Sauté the onion cubes for about 2 to 3 minutes until translucent.
  10. 10. Sprinkle the onions with flour.
  11. 11. Cook the flour while stirring for about 1 minute.
  12. 12. Deglaze the mixture with wine and broth.
  13. 13. Bring the soup to a boil.
  14. 14. Let the soup simmer for 3 minutes.
  15. 15. Add the chopped herbs.
  16. 16. Cook the herbs covered for about 2 minutes.
  17. 17. Heat 1 tablespoon of butter in a pan.
  18. 18. Sauté the shrimp for about 2 to 3 minutes.
  19. 19. Puree the soup finely.
  20. 20. Stir the cream into the soup.
  21. 21. Season the soup with salt.
  22. 22. Season the soup with pepper.
  23. 23. Add a bit of sugar.
  24. 24. Froth the soup with an immersion blender.
  25. 25. Fill the cups with the soup.
  26. 26. Add the shrimp to the soup.
  27. 27. Garnish the cups with the remaining herbs.
