🍽️ Herb Mini Meatballs with Bell Pepper Sauce and Balkan Salad

Ingredients
- Peppers, red 2 pcs.
- Onions, yellow 1 pc.
- Parsley, fresh 20 g
- Ground beef 600 g
- Salt pinch
- Pepper, black ground pinch
- Tomato paste 2 tbsp
- Honey 1 tbsp
- Sugar pinch
- Vine tomatoes 8 pcs.
- Cucumbers 1 pc.
- Olive oil 3 tbsp
- Balsamic vinegar, dark 1 tbsp
Instructions
- 1. Preheat the oven to 250 degrees Celsius using top and bottom heat.
- 2. Wash the bell peppers thoroughly.
- 3. Cut the bell peppers into quarters.
- 4. Remove the tough stem and seeds from the pepper quarters.
- 5. Line a baking tray with baking paper.
- 6. Place the pepper quarters on the tray with the skin side facing up.
- 7. Slide the tray onto the top rack of the oven.
- 8. Bake the peppers for about 8 minutes.
- 9. Remove the peppers as soon as they have dark, charred spots on the skin.
- 10. Peel the onion.
- 11. Finely chop the onion.
- 12. Wash the parsley.
- 13. Shake the parsley dry.
- 14. Pluck the parsley leaves from the stems.
- 15. Chop the parsley leaves finely.
- 16. Let the baked peppers cool down.
- 17. Reduce the oven temperature to 180 degrees Celsius with hot air circulation.
- 18. Take half of the chopped onion into a bowl.
- 19. Take half of the chopped parsley into the same bowl.
- 20. Add the minced meat to the bowl.
- 21. Season the mixture with salt.
- 22. Season the mixture with pepper.
- 23. Mix all ingredients in the bowl thoroughly.
- 24. Form small meatballs with a diameter of about 3 centimeters.
- 25. Place the meatballs on the baking tray.
- 26. Slide the tray onto the middle rack of the oven.
- 27. Bake the meatballs for approx. 15 minutes.
- 28. Peel the charred skin off the cooled pepper quarters.
- 29. Place the peeled peppers in a pot.
- 30. Add the tomato paste to the pot.
- 31. Add the remaining chopped onion to the pot.
- 32. Add the remaining parsley to the pot.
- 33. Add the honey to the pot.
- 34. Puree all ingredients in the pot into a sauce.
- 35. Warm the pepper sauce over low to medium heat.
- 36. Season the sauce with salt.
- 37. Season the sauce with pepper.
- 38. Season the sauce with sugar.
- 39. Wash the tomatoes.
- 40. Wash the cucumbers.
- 41. Remove the stems from the tomatoes.
- 42. Cut the tomatoes into about 6 to 8 wedges.
- 43. Dice the cucumbers into pieces of approx. 1 centimeter.
- 44. Put the tomatoes and cucumbers into a bowl.
- 45. Drizzle the olive oil over the salad.
- 46. Add the balsamic vinegar to the salad.
- 47. Season the salad with salt.
- 48. Season the salad with pepper.
- 49. Season the salad with sugar.
- 50. Mix the salad thoroughly.
- 51. Take the meatballs out of the oven.
- 52. Plate the meatballs.
- 53. Add the pepper sauce to the meatballs.
- 54. Add the Balkan salad to the plates.
- 55. Serve the dish.
