  1. 1. Preheat the oven to 180 degrees Celsius with fan circulation.
  2. 2. Peel the potatoes and rinse them under cold running water.
  3. 3. Cut the potatoes into halves or quarters depending on their size.
  4. 4. Wash the rosemary and 10 grams of thyme and shake off excess water.
  5. 5. Carefully pick the leaves off the thyme and rosemary stems.
  6. 6. Line a baking tray with baking paper.
  7. 7. Place the potatoes, herbs, salt, and 5 tablespoons of olive oil on the tray.
  8. 8. Mix everything well so the potatoes are evenly coated.
  9. 9. Bake the potatoes in the oven for about 25 minutes until golden brown.
  10. 10. Wash the tomatoes and remove the hard stem at the top.
  11. 11. Slice the tomatoes into approximately 1-centimeter thick slices.
  12. 12. Wash the remaining thyme and shake off excess water.
  13. 13. Pick the thyme leaves off and chop them finely.
  14. 14. Peel the garlic and dice it into small pieces.
  15. 15. Pour some flour onto a flat plate.
  16. 16. Rinse the pork chops and pat them dry with kitchen paper.
  17. 17. Season the pork chops on both sides with salt and pepper.
  18. 18. Turn the pork chops in the flour until they are coated all over.
  19. 19. Heat 3 tablespoons of olive oil in a large frying pan over medium to high heat.
  20. 20. Fry the pork chops for about 2 minutes on the first side.
  21. 21. Turn the pork chops and fry them for another 1 minute.
  22. 22. Remove the pork chops from the pan and set them aside.
  23. 23. Add 1 tablespoon of olive oil to the pan drippings.
  24. 24. Fry the tomato slices for about 2 minutes over medium heat.
  25. 25. Season the tomatoes with salt and pepper.
  26. 26. Remove the tomatoes from the pan and set them aside.
  27. 27. Melt the butter in the same pan until it foams slightly.
  28. 28. Add the diced garlic and chopped thyme to the butter.
  29. 29. Season the butter lightly with salt and pepper.
  30. 30. Place the pork chops back into the pan.
  31. 31. Swirl the pan and turn the pork chops several times in the herb butter.
  32. 32. Remove the potatoes from the oven when they are cooked.
  33. 33. Plate the potatoes, pork chops, and tomatoes on pre-warmed plates.
  34. 34. Serve the dish immediately and enjoy your meal.
