🍳 Coconut Crepes with Caramelized Pineapple Rings

Ingredients
- Eggs 4 pcs.
- Wheat flour, Type 405 200 g
- Salt pinch
- Coconut milk 400 ml
- Pineapple 1 pcs.
- Butter 1 tbsp
- Brown sugar 2 tbsp
- Oil 6 tbsp
Instructions
- 1. Whisk the eggs in a bowl.
- 2. Add the flour and salt and mix everything well.
- 3. Stir in the coconut milk gradually.
- 4. Keep stirring until a smooth and slightly thick batter forms.
- 5. Peel the pineapple and cut it into quarters.
- 6. Remove the hard core from the pineapple pieces.
- 7. Slice the pineapple into rings.
- 8. Heat the butter in a pan.
- 9. Add the pineapple slices to the hot pan.
- 10. Sprinkle the pineapple with sugar.
- 11. Fry the pineapple for about 4 minutes on each side until caramelized.
- 12. Remove the pineapple from the pan and set it aside.
- 13. Clean the pan thoroughly.
- 14. Reheat the pan with one tablespoon of oil over medium heat.
- 15. Pour a ladle of batter into the hot pan.
- 16. Swirl the pan to spread the batter thinly and evenly.
- 17. Cook the crepe for about 1 to 2 minutes until it is golden brown.
- 18. Flip the crepe when it releases easily from the pan bottom.
- 19. Cook the other side for about 1 minute until golden brown.
- 20. Place the finished crepe aside.
- 21. Repeat the process until all the batter is used.
- 22. Plate the coconut crepes.
- 23. Add the caramelized pineapple rings.
- 24. Serve the dish immediately.
