  1. 1. Place the gelatin leaves in a bowl of cold water and let them soften.
  2. 2. Add the cream and coconut milk to a saucepan and bring the mixture to a boil.
  3. 3. Stir the sugar into the hot liquid.
  4. 4. Remove the saucepan from the heat and let the mixture steep for about 10 minutes.
  5. 5. Remove the gelatin leaves from the water and gently squeeze them to remove excess water.
  6. 6. Stir the gelatin into the cream-coconut mixture until it has completely dissolved.
  7. 7. Divide the panna cotta mixture evenly among four glasses.
  8. 8. Place the glasses in the refrigerator for about 3 hours until the panna cotta is set.
  9. 9. Cut the melons in half and remove the seeds.
  10. 10. Peel the skin from the melons and cut the flesh into small cubes.
  11. 11. Cut the lime in half and squeeze out the juice.
  12. 12. Place the melon cubes in a bowl.
  13. 13. Add two tablespoons of lime juice and honey to the melons.
  14. 14. Toss the melons well with the lime juice and honey.
  15. 15. Carefully release the panna cotta from the molds or glasses.
  16. 16. Serve the panna cotta together with the melon salad.
